Cheesy Broccoli Potatoes

When it comes to affordable dinners, you can’t beat this variation on vegetarian stuffed potatoes filled with cheesy broccoli. It’s cheesy and gooey, packed with flavour and comfort.

Cheesy Broccoli Potatoes: Vegetarian Stuffed Potatoes

One of my favourite dinners when I was a kid, was a (probably over-processed) chicken with a cheesy broccoli filling. It was just comfort food, and there was such joy in cutting it open and seeing the cheese ooze out.

This is a vegetarian twist on my childhood favourite. Instead of being squeezed into chicken, it’s plonked atop a soft, baked potato.

If you are feeding younger children, you could chop the broccoli up into smaller bits, or even swap for a different vegetable, like cauliflower. This budget-friendly recipe is a great one to wheel out when you want to make something easy, while also nutritious. You can even just wrap the potatoes in foil and cook them in the slow cooker, if you’re having a busy day and want half the work done by dinner time. All you’ll have to do is whip up the broccoli stuffing, and you’re done!

Cheesy Broccoli Potatoes

I remember, as a kid, that there used to be a chicken stuffed with broccoli that we’d have as kids. While I don’t know if that chicken still exists, I do know that this is a delicious take on this filling and works beautifully on stuffed potatoes.


Ingredients

Scale

1 broccoli head, cut into small florets and steamed until bright green

4 large potatoes

2 tbsp butter

2 tbsp plain flour

1 cup milk

1/2 tsp garlic powder

1/2 tsp onion powder

1 1/2 cup grated cheese


Instructions

1. Wash the potatoes, wrap in foil and cook in the slow cooker (on high for 4 hours). Alternatively cook in an air-fryer or oven.

2. In a medium sauce pan over medium heat, melt the butter. Add in garlic and onion powder, and stir. Add in the flour and stir for 2 minutes.

3. Add in the milk, and continually whisk until smooth, and mixture is boiling. Reduce the heat and add in the cheese and broccoli. Mix to combine.

4. Cut open each potato and smother with the cheesy broccoli mixture. Serve immediately.
