How to make curried eggs for sandwiches

  1. Boil the eggs

    Place the eggs in a saucepan and cover with cold water.
    Bring to a boil, then reduce heat and simmer for 10 minutes.
    Drain and transfer eggs to a bowl of icy cold water to cool completely.

  2. Peel and chop

    Once cool, peel the eggs and roughly chop them. Set aside in a large bowl.

  3. Make the curried mayo

    In a small bowl, mix together the mayonnaise, curry powder, salt and pepper.

  4. Combine

    Pour the dressing over the chopped eggs and gently mix to combine.

  5. Serve

    Spoon onto fresh bread or rolls.
    Top with chopped chives if you like a little extra flavour and colour.

6 hard boiled eggs, peeled and chopped roughly

3/4 cup whole egg mayonnaise

1 1/2 teaspoon curry powder

Salt and pepper, to taste

Bread or rolls, to make sandwiches


Instructions

  1. Boil the eggs until firm. Cool immediately in icy cold water. Peel and chop.
  2. Combine the dressing.
  3. Add to the eggs, and mix to combine.
  4. Serve on fresh bread or bread rolls. Top with chopped chives.
