How to make curried eggs for sandwiches

- Boil the eggs
Place the eggs in a saucepan and cover with cold water.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Drain and transfer eggs to a bowl of icy cold water to cool completely. - Peel and chop
Once cool, peel the eggs and roughly chop them. Set aside in a large bowl.
- Make the curried mayo
In a small bowl, mix together the mayonnaise, curry powder, salt and pepper.
- Combine
Pour the dressing over the chopped eggs and gently mix to combine.
- Serve

Ingredients
6 hard boiled eggs, peeled and chopped roughly
3/4 cup whole egg mayonnaise
1 1/2 teaspoon curry powder
Salt and pepper, to taste
Bread or rolls, to make sandwiches
Instructions
- Boil the eggs until firm. Cool immediately in icy cold water. Peel and chop.
- Combine the dressing.
- Add to the eggs, and mix to combine.
- Serve on fresh bread or bread rolls. Top with chopped chives.
