Mum’s curried eggs (for sandwiches)

Description

This creamy curried eggs recipe is quick, easy, and perfect for sandwiches, wraps or lunchboxes. Made with mayo, curry powder and boiled eggs, it’s a classic Aussie favourite that’s always a hit.


Ingredients

6 hard boiled eggs, peeled and chopped roughly

3/4 cup whole egg mayonnaise

1 1/2 teaspoon curry powder

Salt and pepper, to taste

Bread or rolls, to make sandwiches


Instructions

  1. Boil the eggs until firm. Cool immediately in icy cold water. Peel and chop.
  2. Combine the dressing.
  3. Add to the eggs, and mix to combine.
  4. Serve on fresh bread or bread rolls. Top with chopped chives.
