Easy Christmas sausage rolls filled with pork, creamy brie and cranberry sauce, wrapped in golden puff pastry. Perfect for festive entertaining!

If there’s one thing that always disappears quickly at a party, it’s a good sausage roll. And these Christmas sausage rolls with pork, brie and cranberry might just be my favourite festive version yet.
They’re a little bit fancy, but ridiculously easy to make. Think golden, flaky puff pastry wrapped around juicy pork sausage, creamy melted brie and a little spoonful of sweet cranberry sauce.
The combination is SO good.
They’re perfect for Christmas parties, festive grazing platters, taking along to a gathering, or even popping on the table for Christmas lunch.
And the best bit? You only need a handful of ingredients, and there’s no complicated preparation involved. We’re using regular pork sausages to make life extra easy!

Why you’ll love these Christmas sausage rolls
There’s something about brie and cranberry that just feels like Christmas, isn’t there?
These little sausage rolls are:
- Super easy to make: No mixing up sausage mince or complicated preparation. Just assemble, fold and bake.
- Perfect for entertaining: They’re easy to pick up and eat, making them ideal Christmas party food.
- A little bit fancy: The brie and cranberry make an ordinary sausage roll feel extra special.
- Made with simple ingredients: Just a few supermarket ingredients and you’re ready to go.
- Great for making ahead: You can assemble them in advance and bake them when you’re ready.

Ingredients for Christmas sausage rolls
Makes 12 sausage rolls
- 3 pork sausages, casings removed
- 1 wheel of brie, sliced approximately ½cm thick
- Cranberry sauce, approximately 3–4 tablespoons
- 3 sheets of puff pastry, thawed
- 1–2 eggs, beaten, for egg wash
- Sesame seeds, for sprinkling
A little note on the ingredients
Pork sausages: I use regular pork sausages and simply remove the casings. It’s such a handy shortcut because the sausage meat is already seasoned and ready to use.
Brie: A creamy brie works beautifully here. You don’t need to remove the rind; it softens as the cheese melts.
Cranberry sauce: The sweetness of the cranberry sauce balances the savoury pork and rich brie. You only need a little on each sausage roll.
Puff pastry: Store-bought frozen puff pastry makes these so quick and easy. Just let it thaw enough to fold without cracking, but keep it cool.

How to make Christmas sausage rolls
These are so simple to put together, and you don’t need any fancy equipment.
Step 1: Prepare the oven and pastry
Preheat your oven to 180°C fan-forced and line a large baking tray with baking paper.
Cut each sheet of puff pastry into four equal squares. You’ll have 12 squares altogether.

Step 2: Add the pork and brie
Remove the casings from the pork sausages and divide each sausage into four equal portions.
Place one portion of sausage meat in the centre of each pastry square.
Top each portion with a slice of brie.

Step 3: Add the cranberry sauce
Spoon a little cranberry sauce over the brie on each sausage roll.
You don’t need too much. Just enough to add that lovely sweet, festive flavour without making the pastry soggy.

Step 4: Fold the pastry
Brush the edges of each pastry square with beaten egg.
Fold the pastry over the filling, pressing the edges together and tucking in the ends to enclose the sausage meat, brie and cranberry.
Place each sausage roll onto your prepared baking tray, with the seam underneath where possible.
Step 5: Brush and bake
Brush the tops with the remaining egg wash and sprinkle with sesame seeds.
Bake for approximately 20–30 minutes, or until the pastry is puffed and beautifully golden and the pork is cooked through. The centre of the pork filling should reach 71°C.
Allow them to cool for a few minutes before serving, because that melted brie will be HOT!
