
If I could marry an appliance, it might just be our air-fryer. It’s the one appliance I can never ever put away, because it gets used too much.
Working from home, I am always looking for easy lunch or dinner ideas, and this one fits the bill. I used to always make slow cooker baked potatoes {which is particularly great if you’ve got a lot of mouths to feed and you’re out of the house all day}, but this is the way we do it now. So fast, and it makes them so soft inside {and sightly crunchy on the outside}.

Air-Fryer Baked Potatoes Recipe
Ingredients
4 large potatoes, scrubbed
2 tablespoons of vegetable oil
Toppings of your choice
Instructions
- Scrub your potatoes until all dirt is removed. Rub with vegetable oil.
- Place into the air-fryer and cook at 190ºC for 40 minutes. Check after 40 minutes, they may need 5 minutes more. You can insert a knife into the middle and see that it’s soft enough.
- Top with all your favourite toppings. We love sour cream, cheese and bacon, with a sprinkling of chives.
