Bill Granger’s Smashed Cucumber Salad

A refreshing salad, packed with flavour, this Japanese style smashed cucumber salad is a favourite, created by the talented Bill Granger. A must-try this summer!

Working from home, lunchtime can be quite a bore. It’s a life of leftovers and stolen pieces of cheese while I type, when I’d love to be stepping out from an office and into a salad bar or cafe.

But I wouldn’t swap it for the world, because I love the flexibility.

I mean, where else can you work and watch The Secret Lives of Mormon Wives. 👀

I made this salad while taking a break from work, and I forgot how good it was, having made it years ago. It is a flavour sensation. The creamy avocado with the crunchy cucumber is so delicious.

I’m a lover of mint, and I can’t imagine leaving it off this salad, but do as you please… (please try it with though!).

Smashed Cucumber Salad

Ingredients

2 ripe avocados, cut into bite-size pieces
1 large cucumber, smashed and chopped into bite-size chunks
100 g edamame beans, cooked to packet instructions (microwave is quick and easy)
6 spring onion stems, finely sliced
1 bunch of mint, leaves torn
2 teaspoons toasted sesame seeds

DRESSING

50ml mirin
100ml sesame oil
40 ml rice wine vinegar
20 ml lemon juice

Instructions

1. Smash the cucumber with a rolling pin, and then cut into 2cm pieces. Place the cucumber into a salad bowl or serving platter.
2. Top with the avocado pieces, and add the cooked edamame beans.
3. Make the dressing by combining all ingredients together. Pour dressing over salad. Top with mint, spring onion and sesame seeds. Serve immediately.
