Easiest recipe ever! 🍋 You’ll love this no-bake lemon coconut slice, it’s zesty, and sweet, and a breeze to make (even the kids could do it!)
Do you think there’s an official age that we transition from loving chocolate-y things, and then move to lemon-y flavours? For the first half of my life I would do *almost* anything for a gooey chocolate souffle or brownie, and now I would walk a million miles (almost) for a lemon tart, or this lemon slice.
This recipe is super easy to make (great for bake stalls), and if you use home brand products, it’s super cheap too. We love that.
How to make Lemon Coconut Slice
STEP ONE: Line a lamington or slice tin with baking paper.
STEP TWO: Crush your biscuits. You can do this by hand, in the packet, or in a food processor or blender. By hand will result in a chunkier slice base.
STEP THREE: In a large bowl, combine the biscuits, condensed milk, coconut, butter and lemon. Stir to combine. Press into the prepared tin and put into the fridge to set for 30 minutes.
STEP FOUR: Make the icing by combining all ingredients (excluding the coconut) into a bowl, and stirring to combine. Spread over slice, and sprinkle with coconut. Place into the fridge for 30 minutes to set. Cut into squares or bars.

Yes! Lemon Coconut Slice can be stored in an airtight container in the fridge for up to 7 days, or can be wrapped and kept in an airtight container in the fridge for up to 2 months.
