Lemon Coconut Slice

Ingredients

2 packets of plain sweet biscuits (like Arrowroot), blitzed or crushed
1 395g tin of condensed milk
1 cup desiccated coconut
200g butter, melted

1 lemon, juiced and zested

ICING

2 cups icing sugar
3 tablespoons lemon juice
50g butter, melted
Desiccated coconut, for decorating

Instructions

  1. Line a lamington or slice tin with baking paper.
  2. In a large bowl, combine the biscuits, condensed milk, coconut, butter and lemon. Stir to combine. Press into the prepared tin and put into the fridge to set for 30 minutes.
  3. Make the icing by combining all ingredients (excluding the coconut) into a bowl, and stirring to combine. Spread over slice, and sprinkle with coconut. Place into the fridge for 30 minutes to set. Cut into squares or bars.
