2 packets of plain sweet biscuits (like Arrowroot), blitzed or crushed
1 395g tin of condensed milk
1 cup desiccated coconut
200g butter, melted
1 lemon, juiced and zested
ICING
2 cups icing sugar
3 tablespoons lemon juice
50g butter, melted
Desiccated coconut, for decorating
Instructions
- Line a lamington or slice tin with baking paper.
- In a large bowl, combine the biscuits, condensed milk, coconut, butter and lemon. Stir to combine. Press into the prepared tin and put into the fridge to set for 30 minutes.
- Make the icing by combining all ingredients (excluding the coconut) into a bowl, and stirring to combine. Spread over slice, and sprinkle with coconut. Place into the fridge for 30 minutes to set. Cut into squares or bars.
