Bill Granger’s Banana Butterscotch Pudding

I can’t master the art of banana consumption in our house. Well, we know how to eat them, but I haven’t yet perfected the art of knowing just how many to buy. We either have too many, or not enough. Luella has just started to love bananas and will jam a whole one into her mouth within seconds. So many times I’ve gone searching for a banana that she’s stashed somewhere, because she couldn’t possibly eaten it so fast… then I watched her eat one, and yep, she can definitely eat it that fast.

This recipe is for one of those times that you have too many bananas, and they’re sitting in your bowl begging you to make something out of them. They’ll be whispering, “banana butterscotch pudding” and you should listen.

INGREDIENTS

125 g Plain Flour
115 g caster sugar {superfine}
3 teaspoons baking powder
1 banana, mashed
250 ml milk
85 g butter, melted
1 egg, lightly beaten
1 teaspoon vanilla extract

Topping
140g brown sugar
1/4 cup Golden Syrup
250 ml boiling Water

Method

♥ Preheat oven to 180 degrees Celsius. Grease an ovenproof dish {around 2.5L in capacity}.
♥ Sift the flour, salt, sugar, and baking powder into a bowl. Add the mashed banana, milk, butter, egg and vanilla. Mix until well combined. Pour into prepare baking dish.
♥ Combine the topping in a small pot and bring to the boil. Gently pour over the pudding in the baking dish.
♥ Bake for 30-40 minutes or until cooked through. Serve with ice cream or cream.

If you have too many bananas, they’re starting to turn black and you don’t like them that ripe but you don’t have time to cook them up, Just put them in the freezer, peel them and wrap in plastic… great for a smoothie, great for cooking up when you do have the time. I’ve enjoyed many a Bill Granger Banana recipe in the past 🙂

    I really like his food, I think his recipes are easy to follow and in my experience have always worked. This pudding looks awesome. So moist and yummy… It’s lunchtime here and my mouth is watering!! Off to feed the cherubs and myself. Jx

  3. This looks delicious! I too have problems with accurate banana purchasing and consumption. I’ve made that many loaves of banana bread… This looks like a new fun alternative 🙂

  4. Ooh I am going to try this tonight, thanks Telle! I have a freezer full of old bananas when I’ve overestimated how many we need. I heard if you blend frozen bananas it magically makes banana ice-cream – true story! Another one to had to your banana arsenal
