This slow cooker chicken soup is one of those recipes that just feels good.

📝 Step-by-step instructions

  1. Prepare your ingredients

    Dice your vegetables (or use sofrito if you have it ready to go). Rinse your dry soup mix well under cold water.

  2. Add everything to the slow cooker

    Place the vegetables, soup mix, water, stock cubes, and chicken drumsticks into your slow cooker.

  3. Cook low and slow

    Cook on low for 6–8 hours, allowing the flavours to develop and the chicken to become tender.

  4. Shred the chicken

    Once cooked, carefully remove the chicken from the slow cooker. Remove the meat from the bones and discard the bones and skin.

  5. Return chicken to the soup

    Shred or break up the chicken and return it to the soup. Stir everything together until well combined.

  6. Serve and enjoy

    Serve hot with bread and butter on the side. Perfect for dipping and soaking up all that flavour.

Ingredients

  • 1 1/2 cups sofrito
    (or 1 leek, 1 carrot, 2 celery sticks, diced)
  • 1 large zucchini, diced
  • 1 small potato, diced
  • 1 1/4 cups dry soup mix, rinsed
  • 8 cups water
  • 23 chicken stock cubes
  • 1kg chicken drumsticks

Instructions

  1. Add all ingredients to the slow cooker.
  2. Cook on low for 6–8 hours.
  3. Remove chicken, shred meat, discard bones and skin.
  4. Return chicken to the soup and stir to combine.
  5. Serve hot with bread and butter.
