- 1 1/2 cups sofrito
(or 1 leek, 1 carrot, 2 celery sticks, diced) - 1 large zucchini, diced
- 1 small potato, diced
- 1 1/4 cups dry soup mix, rinsed
- 8 cups water
- 2–3 chicken stock cubes
- 1kg chicken drumsticks
Instructions
- Add all ingredients to the slow cooker.
- Cook on low for 6–8 hours.
- Remove chicken, shred meat, discard bones and skin.
- Return chicken to the soup and stir to combine.
- Serve hot with bread and butter.
