I’ve been making this one for years – it’s a go-to in our house, especially when zucchini is in season and affordable. What I love is that you can almost throw anything into it. Got corn kernels, toss ’em in. Same goes for capsicum, ham and even a little feta cheese.

Can you freeze zucchini slice?
Absolutely! Zucchini slice can be frozen. You can store it in an airtight container, or pop into a sealed freezer bag – and this will last up to three months in the freezer. When you want to eat it, you can thaw it in the fridge overnight and just reheat it in the microwave, oven, or even eat it cold.
How long does zucchini slice last in the fridge?
Zucchini slice will last in the fridge for up to 5 day, as long as it’s stored correctly – so in an airtight container. Make sure you let the zucchini slice cool, and then slice and put into the container within 2 hours of cooking.
Is zucchini slice healthy?
In short, yes… it can be. It really depends on which recipe you use, and how you adapt it. Zucchini slice is considered a great way to include vegetables in your diet, because of the zucchini in it and the ability to include lots of other vegetables. There’s also the ability for it to be high in fat, with cheese and oil… so you can adapt the recipe to suit your own health and dietary needs.
What to serve with zucchini slice?
It’s delicious on it’s own, but you can serve with a simple side salad, with lettuce, tomato, cucumber and carrot.

How to make my easy zucchini slice
Ingredients:
- 3 medium zucchini, grated and squeezed to remove excess liquid
- 1 brown onion, grated or finely chopped
- 3 rashers of bacon, finely chopped (or 4 rashers of short streaky bacon)
- 5 eggs
- 1 cup of self-raising flour
- 1 cup grated tasty cheese
- ½ cup oil (vegetable or olive oil)
- Salt and pepper, to taste
- Preheat your oven
Set your oven to 180ºC (fan-forced). Prepare a slice tin by spraying it with oil or lining it with baking paper.
- Grate and prep your veggies
Grate your zucchini and onion, then use a clean tea towel or your hands to squeeze out the excess liquid from the zucchini. This stops the slice from going soggy.
- Mix all ingredients together
In a large mixing bowl, add the:
• Grated zucchini
• Grated or finely chopped onion
• Chopped bacon
• Eggs
• Self-raising flour
• Grated cheese
• Oil
• Salt and pepper
Give everything a really good mix until it’s well combined. - Pour into prepared tin
Transfer the mixture into your lined tin and spread it out evenly with a spatula or spoon.
- Bake until golden
Place the tin into the oven and bake for 35–40 minutes, or until the top is golden and the centre is cooked through. A skewer inserted in the middle should come out clean.
- Cool and slice
Let the slice cool for 5–10 minutes before cutting into squares or rectangles. This helps it set and makes slicing easier.
- Serve and enjoy
Serve warm with a simple side salad, or pop into lunchboxes cold. It’s also perfect for snacks or quick dinners on busy nights.

Instructions

Notes
With the oil, I personally prefer the vegetable oil as it’s a milder taste. Completely up to you.
