Zucchini Slice.

Hey you. Yeah you. Don’t click away from me. I know you don’t like zucchini. You say it doesn’t have much flavour. Stay with me for a minute. Let me convince you. Give zucchini a chance.

Zucchini you say? Never heard of it? Courgette perhaps? Whatever you’re calling it where you are, this is delicious.

I know I say delicious a lot. But this really is. I’ve been making zucchini slice for years now, and have been getting rave reviews. Last week I changed up the recipe, made it all healthy and holy smokes it’s better. Even Hubby said so. He said this kicks your other zucchini slice’s butt (or something equally as complimentary).

Get grating.

Zucchini / Courgette Slice

350g zucchini, grated
3/4 cup Self-Raising Flour
2 cups mixed vegetables diced (I used grated carrot, red capsicums/peppers, mushrooms)
1 1/2 cups low fat cheese (you could do a blend of tasty and parmesan if you liked)
1/2 cup peas
1/2 cup corn
2 eggs
3 egg whites
1 onion, diced
1 cup weight watchers bacon (or lean ham), diced

Preheat your oven to 180 degrees celsius.

Combine all ingredients in a bowl – with only 2/3 of the cheese.

Mix together.

Spray a dish with cooking spray or line it with baking paper. Fill with mix. Top with remaining cheese.

Cook 35 – 40 minutes.

Serves 8.

Weight Watchers Points per serve: 2.5

    i don’t think my recipe is entirely like yours but very very similar.

    I make a rather nice sweet potato quiche but it is probably not that healthy. I will post it on my blog one day soon.

    This sounds good. Maybe, just maybe, I could get my hubby to try it. Doubt it though! Worst than a kid, I tell you 🙂

  7. Telle I gave this recipe to an old high school friend today, she has an oversupply of zucchinis from her own garden…anyway, her kids and hubby ALL came back for second helpings!

    Going to swap this for my usual not quite so healthy (5 eggs, 1 cup olive oil) zucchini slice!

  8. I just made this – my 12 month old Said to tell you it was delicious! Just a question, have you ever successfully frozen this slice? I made quite a lot and it would be handy to have some in the freezer for a rainy day.
