Zucchini Slice

Description

This easy zucchini slice recipe is quick to make, freezer-friendly, and perfect for lunchboxes, dinners, or snacks.


Ingredients

Units Scale

3 medium zucchini, grated and squeezed to remove excess liquid

1 brown onion, grated or finely chopped

3 rashers of bacon, finely chopped (or 4 rashers of short streaky bacon)

5 eggs

1 cup of self-raising flour

1 cup tasty cheese, grated

1/2 cup of oil (vegetable or olive oil)

Salt and pepper, to taste


Instructions

  1. Preheat the oven to 180ºC (fan forced). Spray a slice tin with oil, or line with baking paper.
  2. In a large bowl, combined the grated zucchini, onion, bacon, eggs, cheese, self-raising flour, oil and salt and pepper. Stir will until everything is evenly mixed.
  3. Our the mixture into your prepared tin, spreading it out evenly. Bake for 35-40 minutes, or until it’s golden brown on top, and set in the middle.
  4. Let the slice cool slightly before cutting into rectangles or squares. Enjoy warm with a salad, or cold popped into a lunchbox.

Notes

With the oil, I personally prefer the vegetable oil as it’s a milder taste. Completely up to you.
