Tomato, ricotta & basil pasta recipe

I don’t know where ricotta has been all my life, but I adore it. I’m glad we’ve found each other. The other day Ma whipped up some crackers with a smear of ricotta, half a cherry tomato and a sprinkling of salt … and I was in heaven.

This dish is heaven too. It’s light, easy, and quick to make. It’s the ultimate mid-week meal. I used little tube pasta but it would suit little shells perfectly so the ricotta can hide within them, surprising you at each bite.

Ingredients
250g cherry tomatoes, halved
a handful of basil, torn
200g ricotta {I always buy from the deli}
2 cloves garlic, chopped finely
1 tbs olive oil
400g pasta

Method
♥ Cook the pasta according to the instructions on the packet or until al dente
♥ While the pasta is cooking, heat a pan over medium. Add the oil and cook the garlic until fragrant {until you can really smell it}. Add the tomatoes.
♥ Saute the tomatoes for 3 minutes or until they soften slightly. Remove from heat.

♥ Once the pasta is cooked, drain and add it to a serving bowl. Toss in the cooked tomatoes and garlic. Place spoonfuls of ricotta on top, as well as torn basil. Season with salt and pepper.
♥ Toss before serving.
♥ Serves 4

Note: If you like things spicy add some chopped chilli to pan when you’re cooking the garlic.

  1. Ricotta is good, but a friend has got me hooked on Danish Feta….yummo. Do egg and bacon rolls count as a quick weeknight meal?? Sooo easy and kids love em!!

    My easy meal is quiche, I did it last night, a crustless one and my little 2 1/2 yr old even helped me. Though I did cringe when she was passing me the eggs so animatedly I thought they would end up on the roof!

  3. I did one of these a couple of weeks ago, almost identical (except for the less-healthy addition of bacon, for my husband and eldest son who can't get enough of it).

    It was devine!

    My quick meal is spaghetti & meat balls. The meat balls are from the butchers and they're huge so following my mum's advice, I make each one into four tiny meat balls and bake them, that's why it's so quick- no need to hang around in the kitchen. Cook the pasta, heat the (store bought) sauce. Done 🙂
