Thermomix Apple Tea Cake Recipe

If you’ve been reading my blog for a while, you’ll know that my relationship with my Thermomix is strained. We’ve been madly in love, and then there are times when I have minor buyer’s remorse. But it’s not her, it’s me. I just don’t know how to use her properly. I mean, I know how to use it… but I just need to make an effort to use it for more than just blending stuff.

I will do it. I will.

Well, I did, actually. I made this cake. I always forget that there are different attachments where you can steam things… and I’m sure that this would make dinner super easy. Anyway, I will use it more… let’s get back to this cake.

It’s delicious. I’m a fan of any apple-type cake, and this one ticks all the boxes. It makes two cakes, so is perfect when you want to entertain or bake for a cake stall, or gift to a friend. I gifted one of my mine to a neighbour. The recipe suggests sprinkling almond slivers over the top, I did one with almond slivers and the other I sprinkled cinnamon sugar over the top. Both were delicious, but the almond slivers actually made the cake next level. I loved the crunch on top. Do as you please.

Thermomix Apple Tea Cake Recipe

Ingredients

250g butter, softened, plus extra for greasing
6 cooking apples {Granny Smith are great}, around 800g
500g water
250g caster sugar, plus extra for sprinkling
4 eggs
1 tsp natural vanilla extract
250g self-raising flour
slivered almonds, for sprinkling

Method

♥ Preheat oven to 160°C. Lightly grease and line 2 round cake tins {20cm} and set aside.
♥ Peel apples, cut into quarters and remove cores. Cut each quarter into 4 slices and set aside.
♥ Place water into the mixing bowl and place Varoma into position. Place apple slices into Varoma dish and tray, then steam 10-15 min/Varoma/Speed 1 until apple is cooked and softened. Transfer apple slices into a bowl and set aside. Clean and dry mixing bowl.
♥ Place sugar into mixing bowl and mill 10 sec/Speed 9.
♥ Add 250g butter and melt 2 min/50°C/Speed 1, then mix 1 min/Speed 3.
♥ Crack eggs into a small bowl, then mix speed 3, adding eggs slowly through hole in mixing bowl lid until just combined.
♥ Add vanilla and flour and mix 20 sec/Speed 3, or until just combined.
♥ Divide batter between prepared cake tins. Top each cake with reserved apple slices by placing slices in circular rows, each slice slightly overlapping the slice before, working from the outside in. Sprinkle with slivered almonds and extra sugar.
♥ Bake for 20 minutes {160°C}. Increase oven temperature to 180°C and bake for 20-25 minutes, or until a wooden skewer inserted into the centre of the cakes comes out clean. Serve warm.

    You TOTALLY need to learn to use your Thermie more, but even so, don’t feel ‘guilty’ about not using it sometimes. I do that too, I go on ‘Thermie binges’ and then droughts. It ebs and flows. And I honestly don’t use it much for baking cakes and such. I like my good old fashioned hand beaters for that, just like my mum, because I’m a bit bonkers like that. But I use my Thermie daily for porridge for my daughter, I make her zucchini egg muffin things with my eyes closed, I make an awful lot of hummus in it, and custard, and peanut butter, and spreadable butter, and blueberry and chia sugar free jam…and dinner is generally always a Thermie creation – I make this chicken sweet potato kidney bean lasagne a lot: http://www.recipecommunity.com.au/main-dishes-meat-recipes/chicken-lasagne/56464, and also steamed pork meatballs are yum! http://www.recipecommunity.com.au/main-dishes-meat-recipes/pork-fennel-and-apple-meatballs/106710, TRTLMT ‘KFC chicken’ gets a fair run around here, as does Skinny Mixer’s butter chicken.
