Summer Pasta Salad

A simple summer pasta salad without any of the heavy dressings that pasta salads often have, this is light, healthy and delicious.

This is a delicious pasta salad recipe that doesn’t need a heavy creamy dressing to make it good. The basil and tomato combo will make your taste-buds sing! You could add in a cheese like feta, ricotta or even Parmesan. Double the recipe if you’re feeding a larger crowd.

Summer Pasta Salad

Ingredients

Scale

150g small shell pasta

2 cloves garlic {in the skin}

300g mixed cherry tomatoes, chopped

1/2 cucumber, diced

1 tablespoon fresh chives, chopped finely

1 handful of fresh basil, torn

4 tablespoons of extra virgin olive oil

2 tablespoons white wine vinegar


Instructions

  1. Cook the pasta as per instructions on the packet. Place the garlic in the water while the pasta cooks. Drain once cooked. Put the garlic to one side.
  2. Place the cooked pasta in a bowl. Add in the tomatoes, cucumber, chives and basil.
  3. In a small bowl mix the vinegar, oil and cooked garlic. Mix to combine, use the back of the spoon to squish the garlic and break it down. Season with salt and pepper and drizzle over the salad.
