Ingredients

150g small shell pasta
2 cloves garlic {in the skin}
300g mixed cherry tomatoes, chopped
1/2 cucumber, diced
1 tablespoon fresh chives, chopped finely
1 handful of fresh basil, torn
4 tablespoons of extra virgin olive oil
2 tablespoons white wine vinegar
Instructions
- Cook the pasta as per instructions on the packet. Place the garlic in the water while the pasta cooks. Drain once cooked. Put the garlic to one side.
- Place the cooked pasta in a bowl. Add in the tomatoes, cucumber, chives and basil.
- In a small bowl mix the vinegar, oil and cooked garlic. Mix to combine, use the back of the spoon to squish the garlic and break it down. Season with salt and pepper and drizzle over the salad.
