5-ingredient Mexican Rice

When it comes to mid-week meals, this easy Mexican rice doesn’t get much easier! We love to serve into bowls and have the toppings on the table so everyone can top with their own favourite bits and bobs!

If your family is anything like mine, then you’re probably regularly serving up tacos for an easy mid-week meal. For us it’s a meal that everyone eats and it is just so easy to make. This is a different take on that Mexican favourite and is filling, budget-friendly and darn tasty – a winning combination!

I’ve popped the ingredients below, and you can see that I’ve used microwave rice – because it’s easy. If you want to save money – you can make rice the day before – I’m simply not that organised!

How to make Mexican Rice

Step one: Drain a can of corn kernels and add to a pan over medium heat to brown. If you don’t have canned corn, frozen corn is absolutely fine. Cook until browned and then transfer to a bowl.

Step two: To the same pan, add 500g of beef mince. Cook until completely browned, and break up any lumps with a wooden spoon as it cooks.

Step three: Return the corn to the pan, and add the taco seasoning. In the past I’ve used the Woolworths brand taco seasoning as it’s super affordable. I’ve been trying out the Mingle products, and am loving their flavours so have been using that instead. Go for whatever taco seasoning you prefer, or whatever you have on hand! Stir to combine.

Step four: Add in the microwave rice. You don’t need to cook this beforehand, as it’s already par-cooked and you’ll finish off the process in the pan. I find it’s easiest to break this up with your hands as you’re adding it to the pan. Add in the black beans, and stir everything to combine and cook through.

Step five: Transfer to bowls and then serve with your favourite toppings. I love coriander, avocado, tomato, sour cream and spring onions. You can add whatever tickles your fancy.

Easy Mexican Rice

Ingredients

420g can of corn kernels, drained

500g beef mince

1 tbs taco seasoning

1 x 250g packet of microwave rice

420g can black beans, rinsed and drained

TOPPINGS OF YOUR CHOICE

Avocado

Coriander 

Spring onions

Cherry tomatoes, chopped

Sour cream

Capsicum

Cheese


Instructions

  1. In a frying pan over medium heat, cook the corn kernels for around 3 minutes or until golden. Transfer to a small bowl and set aside.
  2. Cook the mince until browned, breaking up with a wooden spoon as it cooks. Add the seasoning to pan, as well as the corn, and stir to combine.
  3. Add the rice to the pan (there’s no need to cook this beforehand). Sometimes this is easiest to do with your hands, so you can break it apart easily. Add the black beans, and cook for 2 minutes until cooked through. Remove from heat and serve into bowls.
  4. Top with your favourite toppings! Enjoy.
