420g can of corn kernels, drained
500g beef mince
1 tbs taco seasoning
1 x 250g packet of microwave rice
420g can black beans, rinsed and drained
TOPPINGS OF YOUR CHOICE
Avocado
Coriander
Spring onions
Cherry tomatoes, chopped
Sour cream
Capsicum
Cheese
Instructions
- In a frying pan over medium heat, cook the corn kernels for around 3 minutes or until golden. Transfer to a small bowl and set aside.
- Cook the mince until browned, breaking up with a wooden spoon as it cooks. Add the seasoning to pan, as well as the corn, and stir to combine.
- Add the rice to the pan (there’s no need to cook this beforehand). Sometimes this is easiest to do with your hands, so you can break it apart easily. Add the black beans, and cook for 2 minutes until cooked through. Remove from heat and serve into bowls.
- Top with your favourite toppings! Enjoy.
