Let the kids cook for Father’s day: 2 ingredient pizza dough and instant chocolate mousse

Fat Mum Slim /

I’m completely hopeless when it comes to gift-giving. I get far too excited. I bought Hubby’s present for Father’s Day on Tuesday and I gave it to him last night. Just because I can’t wait. I can feel it hiding in the cupboard and I just want to give, give, give. Of course, now I have nothing to give him on Sunday. Sigh.

Earlier this week Lacey and I cooked up a practice Father’s Day dinner. It’s all really hands on and quick, which is what you want when kids are in the kitchen.

Pizza dough

1 cup of self-raising flour
1 cup of greek or natural yoghurt

♥ Preheat the oven to 200 degrees celcius.
♥ Combine both ingredients and mix until combined. Turn onto a floured surface and knead away. You might need to add in some extra flour if it seems a bit wet. Knead for about 7 minutes.
♥ Roll out until your desired thickness. Place on a tray and top with some tomato pizza sauce {I cheat and use a few spoonfuls of tomato pasta sauce}, top with cheese and your toppings of choice. Pop into the oven and cook until the cheese is melted and delicious.

This mousse is really easy. You can make it while the pizza is cooking, or even earlier in the day.

Instant chocolate mousse

1 x 250g packet of marshmallows
4 tbsps soft butter
250g dark chocolate, chopped
1/4 cup hot water
1 cup double dollop cream {or 1 cup of cream, whipped}
1 tsp vanilla extract

♥ Place the marshmallows, butter, chocolate and water into a heavy based saucepan.
♥ Over a low heat, melt the ingredients and stir occasionally. Once smooth and combined, remove from heat.
♥ While the chocolate mixture cools, combine the cream and vanilla. Stir into the chocolate mixture. Mix until smooth and combined.
♥ Pour into ramekins. It’s really rich so you could make 6-8 small pots, or 4 bigger ones.

Are you good at keeping surprises from people, or are you like me and pretty much hopeless?
