I have an update on the Tinkerbell/Laptop situation. I took it to the local Computer Doctor {those guys are so serious, aren’t they?} and he said he’d look at it. He said that it could cost anywhere between $90 and $2000 {eek!}. Thankfully I got a call yesterday afternoon and the hard drive is slightly damaged but I can save all my photos and other documents. Phew.
There is a lesson in that for all of us: back up! Well, the Computer Doctor says to back-up twice. Once on hard drive and once a cloud-thing. I shall be doing as I’m told.
Let’s celebrate with cake, shall we?
We had Lacey’s little birthday party last week {yep, a post on that is coming} and there was a sweet little boy who didn’t like chocolate. Have you ever heard of such a thing? He was so cute. My Ma isn’t the biggest chocolate fan ever, so every birthday I make her a cake that’s a bit fresher in flavour – think passionfruit, sponge or the like. This year was a lemon sour cream cake {thanks to AWW}. It’s a winner.
Ingredients
250g butter, softened
2 tbs grated lemon rind
2 cups caster sugar
6 eggs
2 cups plain flour
1/4 cup self-raising flour
3/4 cup sour cream
Method
♥ Preheat your oven to 160 degrees celcius {fan forced}. Grease a 25cm round tin with butter, and line the base with baking paper.
♥ Beat the butter, rind and sugar in a bowl with an electric beater until light and fluffy. Add the eggs, one by one. Stir in half the flour and half the sour cream until combined. And then add the remaining flour and sour cream. Stir until completely mixed.
♥ Pour the batter into the prepared tin, and place in the oven. Bake for 1 hour and 25 minutes.
♥ To serve, sprinkle with icing sugar and serve with cream and raspberries or strawberries.

That cake sounds delicious. I make something similar with yoghurt. Cakes with yoghurt and sour cream are always marvellously moist. Hope Lacey had her bestest birthday ever!

Yep. 1/4 cup SR flour and 2 cups of plain flour.
