If you’ve got a box of lemon cake mix sitting in your pantry, you’re just a few steps away from the easiest and yummiest cookies ever. These lemon cake mix cookies are soft, chewy, and packed with zesty flavour – and they come together with just a handful of ingredients. It’s one of those clever little baking hacks that feels like magic (with zero fuss).

NOTE: I use the Greens Lemon Cake Mix because it works well (if it ain’t broke, why fix it?) and I love that it comes with icing mixture, which is great to roll the cookies in before baking, and then also sprinkle on once cooked.

How to make lemon cake mix cookies

Ingredients:

Optional: extra icing sugar (about 1 cup) if your mix doesn’t include any

1 x 420g packet lemon cake mix (I use one that includes the icing sugar mix)

1 egg

100g butter, melted

  1. Preheat the oven

    Set your oven to 170ºC (fan-forced). Line a baking tray with baking paper.

  2. Mix the dough

    In a medium bowl, combine the lemon cake mix, egg, and melted butter. Stir until a thick dough forms. Pop the dough into the fridge for 30 minutes – this helps it firm up and makes it easier to roll.

  3. Roll into balls

    Once chilled, roll the dough into small balls using your hands.

  4. Coat in icing sugar

    Pour the lemon icing sugar mix (or regular icing sugar) onto a plate. Roll each cookie dough ball into the sugar, coating generously.

  5. Bake

    Place the sugar-coated dough balls onto the lined tray, leaving space between each cookie. Bake for 12–15 minutes or until lightly golden and just set.

  6. Cool and sprinkle

    Allow cookies to cool slightly, then dust with extra icing sugar if desired. Serve and enjoy!

1 x 420g lemon cake mix (I choose this one because it has icing mix included)

1 egg

100g butter, melted


Instructions

  1. Preheat the oven to 170ºC, line a baking tray with baking paper. Into a bowl, combine the cake mix, egg and milk and stir to combine. Pop into the fridge for 30 minutes to harden slightly.
  2. Roll the mixture into balls.
  3. Place the lemon icing sugar (or 1 cup of regular icing sugar if your cake mix doesn’t provide them) onto a plate, and roll each cookie into the icing sugar. Place onto the baking tray lined with baking paper.
  4. Bake for 12-15 minutes, until golden. Cool slightly, and sprinkle with a little extra icing sugar mixture.
