How to make a lamington wreath

  1. Whip the cream

    In a large bowl, whip the thickened cream and icing sugar together until soft peaks form. You want it fluffy but still soft enough to pipe or spoon easily.

  2. Prepare the lamingtons

    Lay your lamington fingers out on a board so they’re ready to assemble. You can use:
    Classic chocolate lamington fingers
    Pink lamington fingers
    Or a mix of both

  3. Assemble the wreath

    Using a piping bag or spoon, add cream to one side of each lamington finger. Place the lamingtons on their side, working in a circle, placing them close together until you form a wreath shape.

  4. Decorate

    Add a little extra cream on top, then decorate with berries, speckled eggs, chocolate eggs, or anything festive you love.

  5. Serve

    Serve immediately, or keep refrigerated until ready to serve.


Optional variations

  • Fold a spoonful of jam through the cream for extra flavour and a subtle pink colour
  • Add lemon zest to the cream for a fresh twist

Ingredients

Scale

2 packets lamington fingers (chocolate, pink, or plain)

600ml thickened cream

1/4 cup icing sugar

Decorations of choice (berries, chocolate eggs, speckled eggs)


Instructions

  1. Whip the cream and icing sugar until soft peaks form.
  2. Pipe or spoon cream onto one side of each lamington finger.
  3. Place lamingtons on their side, arranging them in a circle to form a wreath.
  4. Add extra cream on top and decorate as desired.
  5. Serve immediately or refrigerate until ready to serve.
