1 x 420g lemon cake mix (I choose this one because it has icing mix included)
1 egg
100g butter, melted
Instructions
- Preheat the oven to 170ºC, line a baking tray with baking paper. Into a bowl, combine the cake mix, egg and milk and stir to combine. Pop into the fridge for 30 minutes to harden slightly.
- Roll the mixture into balls.
- Place the lemon icing sugar (or 1 cup of regular icing sugar if your cake mix doesn’t provide them) onto a plate, and roll each cookie into the icing sugar. Place onto the baking tray lined with baking paper.
- Bake for 12-15 minutes, until golden. Cool slightly, and sprinkle with a little extra icing sugar mixture.
