This is the recipe where I genuinely beg people to try it.

Air fryer steak bites are ridiculously easy and unbelievably good. Think juicy steak pieces with crispy edges, tossed in garlic butter and ready in just minutes.

My husband Shane is usually the steak expert in our house. Always has been. Which is ironic, because when we first started dating decades ago, I once served him two raw T-bone steaks that I’d shoved in the oven and hoped for the best. It was not my finest moment.

So when he went away for a bit in January and we realised we eat steak a few times a week, I knew I had to sort my steak cooking skills out.

And this method? Absolute winner.

If I ordered this at a restaurant, I would order it again. That’s how confident I am.

The best part is it only takes about 6 minutes in the air fryer, and the result is juicy, buttery steak bites that are perfect for dinner, salads, wraps or just eating straight from the bowl.

How to make air fryer steak bites

  1. Cut the steak

    Cut your steaks into bite-sized cubes. Porterhouse works beautifully, but most tender cuts will work well.
    Try to keep the pieces a similar size so they cook evenly in the air fryer.

  2. Season the steak

    Place the steak cubes into a bowl and drizzle with olive oil.
    Add your seasoning, salt and pepper, then toss everything together until the steak is evenly coated.

  3. Preheat the air fryer

    Preheat your air fryer to 200°C for about 5 minutes.
    This helps the steak cook quickly and gives those lovely slightly crispy edges.

  4. Cook the steak bites

    Place the steak cubes into the air fryer basket in a single layer.
    Cook at 200°C for around 6 minutes, depending on how you like your steak cooked (try 4 minutes for a medium-rare steak).
    You can shake the basket halfway through if you like, but it’s not essential.

  5. Toss in garlic butter

    Tip the cooked steak bites into a bowl and pour over the melted garlic butter.
    Gently toss until the steak is coated and glossy.
    Serve immediately while they’re hot and juicy.

Ingredients

Scale

2 steaks (porterhouse works well), cut into cubes
1 teaspoon olive oil
Seasoning of your choice
Salt and pepper
20g garlic butter, melted


Instructions

  1. Cut the steaks into bite-sized cubes.
  2. Place steak into a bowl and toss with olive oil, seasoning, salt and pepper.
  3. Preheat the air fryer to 200°C for 5 minutes.
  4. Add the steak to the air fryer basket in a single layer.
  5. Cook for around 6 minutes, depending on your preferred doneness.
  6. Transfer to a bowl, pour over melted garlic butter and toss to coat.
  7. Serve immediately.
