Oh man, I love haloumi. I think it can be done so wrong {think hard or too squeaky!} but when it’s done right… well it’s SO right, it’s a cheesy love affair and I’m down with it.
It’s my go-to lunch. I love it.
So this recipe just makes sense. Peas. Mint. Haloumi. HEAVEN.
Haloumi & Pea Fritters Recipe
INGREDIENTS
1 cup frozen peas
1 small zucchini, grated
100g haloumi, grated
1 egg
1/3 cup self-raising flour
2 tablespoons milk
2 teaspoon fresh mint, chopped
Salt and pepper
METHOD
♥ In a small saucepan, bring some water to the boil. Cook the peas for 2 minutes, and then drain. Place into a bowl and mash roughly with a fork.
♥ Add the zucchini, haloumi and egg. Stir to combine. Add in the flour, milk and mint, and stir again until all combined. Season to suit your taste.
♥ Heat a non-stick frying pan over medium heat. Add a little oil for cooking. Place heaped spoonfuls of mixture into the pan, and gently press down so they flatten slightly. Cook for 2 minutes on each side, or until golden brown and cooked through.
♥ Serve with salad, a squeeze of lemon, and a little tzatziki.

Oh yum! We have something similar and we are totally obsessed with haloumi. It just tastes too good! Nom nom!
