Easy Back To School Snacks

So, school is about to go back and that means one thing; LUNCHBOXES. It’s what I think of when I think of back to school {as well as the peace and quiet, and beautiful routine!}. Kids be hungry. Today I’m sharing three recipes using MAGGI 2 Minute Wholegrain Noodles {they’ve got the highest health star rating in the noodle range} that the kids will love. These recipes are great for after school, or lunchboxes… and you could actually even use them for breakfasts or dinners. They’re really versatile {just like 2 Minute Noodles, really!}, and it’s easy to add lots of yummy vegetables and whatever protein tickles your fancy to turn them into a delicious meal.

These are SO good! I love a corn fritter, and my kids do too. Sometimes I’ll leave out the chives and parsley for the kids, because Lulu has a radar for green things and can sometimes turn her nose up at them, but when I cooked these to photograph for this blog post, she yelled, “I can smell you cooking my favourite food!” These freeze quite well too.

NOODLE-Y CORN FRITTERS

INGREDIENTS

1 x packet of MAGGI 2 Minute Wholegrain Chicken Noodles
2 eggs
1/2 cup milk
1 cup plain flour
1/2 teaspoon baking powder
300g corn kernels, drained
1 tablespoon of chives, chopped
1 tablespoon of parsley, chopped
Salt and pepper
Oil, for cooking

METHOD
1. Break the noodles into a bowl, and cover with boiling water. Leave for 3 minutes, and then drain.
2. While the noodles are doing their thing, place eggs, milk, flour and baking powder into a bowl and whisk until combined. Add in the noodles, corn, chives and parsley and mix until combined. Season to taste.
3. Place a large frying pan over medium heat. Put oil into frying pan, and scoop 1/4 cup of the mixture into the frying pan, and cook until golden brown. Turn over and cook the other side.

You can add in whatever vegetables your kids love, or it’s a great recipe to get them to try new vegetables without even knowing they’re really there. Swap out bacon for ham if you please.

VEGGIE, BACON & NOODLE QUICHES

INGREDIENTS

2 x packets of MAGGI 2 Minute Wholegrain Chicken Noodles
1 carrot, grated
1 zucchini, grated
100g corn kernels
1/2 cup sour cream
150g lean bacon, cooked and chopped
1/2 cup tasty cheese {plus a little extra to scatter on top}

METHOD
1. Preheat your oven to 180ºC. Prepare a 12 muffin tin by spraying with a little oil, or use 12 silicon muffin cups.
2. Gently break up noodles into a bowl, and cover with boiling water. Leave to stand for 3 minutes.
3. In a medium-sized bowl, place all of the ingredients and mix to combine. Add in the drained noodles, and mix.
4. Scoop the mixture into the prepared muffin tins, and scatter with a little extra cheese. Cook for 25 minutes.

I am obsessed with this dish and Nasi Goreng since going to Bali. It’s such an easy dish to make for dinners, lunches or even after school snacks. This recipe is how I like to make it, but of course… use whatever you have in your fridge or freezer. You could add frozen peas and corn, or bacon or even chicken. I imagine eating this while tackling homework. What great brain food!

EASY PEASY MEE GORENG

INGREDIENTS

1 x packet of MAGGI 2 Minute Wholegrain Chicken Noodles
1 garlic clove, crushed
1 tablespoon of oil
1/2 carrot, chopped finely
1 cup cabbage, shredded
1/2 cup of bean sprouts
1/2 tablespoon of Kejap Manis
1 teaspoon of sweet chilli sauce
1 tablespoon of butter
1 egg
1 tablespoon of fried shallots

METHOD
1. Place the noodles into a bowl, and cover with bowling water. Leave for 5 minutes.
2. Heat the oil in a pan. Add the garlic, carrots and cabbage. Stir-fry for 2 minutes, or until just softened. Add the noodles, sauces and bean sprouts, and cook for 3 minutes. Transfer to a serving bowl.
3. Place the butter into the same pan, and crack the egg into the pan. Cover with lid, and cook until your egg is cooked through, but the yolk is still soft. Place on top of your noodles. Scatter with fried shallots.

  1. Oh man, this question is right up my alley. With a first time school starter this year, here’s what worked for us in terms of making organisation easier. We got one of those 4 cube shelving units. Bottom shelf for shoes, middle shelf for school clothes and top shelf for bags and extra curricular requirements (hats, sunscreen, empty lunchbags etc). Also, check buy/sell pages for used uniforms in preparation for winter. Finally, lots of talking about what to expect before she starts, and even some practice runs and spending some time at her school beforehand has made our first days much easier.

  2. My son doesn’t like anything sweet so he loves having popcorn rice crackers or savoury biscuits with a drink of milk or water.

  3. The best thing I ever did was create a space all the kids school stuff a spot for them to put their bag etc and a pigeon hole above for me to have all the school paper work

  4. Do all your food prep in advance so you always have things for the school lunches. Have a ton of things in the freezer ready to go.

  5. Pack fruit or vegetable in the lunch box everyday. My son loves cucumbers and red capsicum for afternoon snacking.

  6. Be organised. On the weekends make sure uniforms are washed (and ironed if necessary) and all food shopping is done. Have lunchbox snacks made (rice muffins, pasta salad etc) so school mornings are easier, there’s no lost uniform items and lunchboxes are easy to pack with good nutritious but tasty food.

    This is my 13th year as a school mum & I’ve still got 13 more ahead of me ????????‍♀️
    My tips? Don’t be too gun- ho to start with. Don’t go overboard with trying to make pin worthy lunch boxes, pack what your kids like, especially if they are new to school or still young & then try new things at home before putting them in for school.
    Don’t ask a million questions as soon as you see your kid, especially teenagers!!! Of course you want to know all the things but I find if you ask just a few questions when you first see your kids as the afternoon/evening rolls on they offer up all the info anyway.
    And lastly, go into the term slowly. Don’t book a million after school activities play dates or feel you need to sign up for all the volunteer stuff straight away. Everyone is keen at the start of term but new routines take a little getting used to so go easy. There’s a whole tear ahead to do all that!

  8. Buy everything on the booklist/uniform list as soon as January ticks over (or as soon as is possible)! You’ll be fighting less people for supplies at the shops, you won’t be so frazzled and then you can get on with enjoying the rest of the school holidays without a care in the world!

  9. Start back into a routine a week before school goes back, get the kids excited for school returning by letting them help pack and label theit school stuff, create lunchbox snacks and do spelling tests and some at home revision to get their brains stimulated and ready for school

    * Check your kids labels – have you got enough? If not order more Or get your butt down to Woolies and add a few extra things in your trolley & apply for their free school labels.
    * Label the hell out of everything. There’s nothing worse than loosing 1 half of a pair of $10 socks!! (Yes, seriously, I label my kids socks!!)
    * Stock up on a few special things for Day 1 – could be brand spankin new undies or even a new ruler. kids don’t care. On the First Day back at school, make a cool sign, put out some party plates and confetti – eases the nerves and you win the coolest parent status in your household!
    * Bake Up a Storm! There are a lot of awesome emails / blogs / Woolies Mags doing the rounds with healthy recipes that might give you some inspiration. Get the kids involved one Sunday and make up a few batches.

  11. My best back to school tip is to keep the list of supplies with you and buy a few things in the weeks leading up to going back to school. Also I buy extras of some harder to find items in preparation for the next year.

  12. My best back to school tip is to get as many things ready as you can the night before the school day, eg. Lunch, uniforms out, etc. I find that when I do that it makes for a much less stressful/rushed school morning ????

  13. When it comes to school book lists, Officeworks always sells stationery items cheap (even more so after Christmas). Do your shopping online and select click and collect at your local store. The retail assistants will pick and pack your order (no matter how big or small) and you can typically expect to pick it up in two hours. No chaotic shops. No whiney kids who are over it. Time to peruse the clearance section for extra stuff for you ???? Convenience of being able to browse in your pajamas with a cheeky vino. So many pros! I discovered it this year and it changed my life ????????????

    Is have a few emergency meals ready in the fridge as not only the kids will be exhausted from the return to routine you will too, so having well balanced meals ready to serve or quickly heat can save your sanity, budget or a complete after school hangry tantrum.
    The other thing I’ll do is cook dinner in the morning so it’s ready to serve when we need it at night ( no delays) and u can hang with kids learning about thier new class ????

  15. With 4 of my 5 at school this year my best tip is don’t stress. They’ll pick up on it and go crazy. Plan ahead what’s going in the lunch box and have a morning routine so no one forgets their lunch and no one is left behind. You got this ????

  16. With 3 at school my back to school tips include buying school shoes early for the best range, storing all uniforms for the 1 school in a common area-no more sorting uniforms, bake morning tea treats for the freezer and cut up lots of fruit and vegies each sunday ready for lunches and snacks.

My back to school tip involves having a big bake day and then my mums group have a ‘bake swap’ the following day so we get lots of different morning teas/savoury lunches for the kids throughout the school term. All of this then goes in the freezer in 2 big tubs marked ‘morning teas’ and ‘special Friday lunches’. Kids each day go and choose there morning tea and each Friday they get to choose a special lunch from there also!
    It’s been a real life saver and our mums group do it each school holidays. We love it and we also get to have a catch-up too ????

  18. I always send school lists off to Officeworks! So quick and easy however…… don’t laugh at other Mums for doing this early Jan, while you carry on relaxing watching the tennis thinking you’ve got all the time in the world because you’ll end up running out of back up, back up label tape at midnight, the night before school wishing you’d started earlier!!! Delivery man just delivered extra label tape now! Guess what I’m up to tonight ????

  19. It’s easy to lose track of stationary items when everyone has their pencil cases out. I put a strip of coloured tape close to the end of each pen/pencil/texts/white board marker, wrapped totally around it so it can be seen. It’s easy to spot what is their’s and put it away. The kids around them notice too if someone has picked up the wrong item.

  20. I always start preparing during the Xmas rush, gifts like bags and shoes come in handy for the upcoming school year. We also dedicate Sundays to baking days, making cakes and muffins to prepare for the week

  21. My best tip is a whiteboard. Put everything up there. Library days, extra curricular activities, baking days, the lot!!! I’d be lost without mine.
    As for after school snacks – homemade banana bread made with wholegrain flour is yum and healthy to boot!

    My best back to school tip to is to bake double batches of lunch box staples (e.g. muesli bars, muffins, scones etc.) and freeze them for easy lunch box assembly the night before. By making up the lunch box the night before the frozen foods have time to defrost by morning tea and lunch.

  23. My tip is take advantage of the fridge, I write on mine with whiteboard markers, I have my shopping list on there, just take a photo with your phone and your ready to go. I also have a calendar draw on the freezer, I just do one month at a time with enough space on each day for events, and at the end of the month wipe it off and start again. As for Snacks, I can’t go past scrolls, pizza dough rolled flat topped with anything from pizza, to Cheese and veggiemite, to lemon butter to chocolate, then Rolled up and cut into 2cm disks abated in the oven for 10-15 minutes. They also freeze well

    Is the fact of the kids getting head lice
    We’ve already experienced one infestation
    Oh, the nuisance, and sheer devastation!
    I try to maintain a positive perspective
    But even the treatments are mostly ineffective

    All that combing guarantees patience will be lost!
    So my back to school tip would have to be
    Tie all hair back, and use a spray with tea tree
    Hope and pray that’ll be enough to prevent the nits

  26. My tip is to find a free day or weekend (ha, I know that’s hard when you’re a mum!) and bake up a stack of healthier treats that you can freeze for school snacks or lunches.
    Then on those days when you just can’t handle making lunches, you’re set with a host of yummy goodies in the freezer.

  27. I try to make lunches the night before, takes the pressure of in the morning and means we can be out the door on time. Also this year im planning on doing a cook up of healthy snacks every couple of weeks to freeze so the kids get more variety in their lunchboxes, although am very lucky that my kids eat everything

  28. I always try to involve the kids in what needs to be done. So they help make/prepare/choose lunchbox and snack items (less suspicion about whats in there), also get them to put out their uniform the night before, pack bag for the next day, set own alarm and generally be a bit self sufficient, the responsibilities and tasks increase with age and this makes them more capable humans in general.

  29. Have a routine!! It’s great to have a routine for both adults and kids both the nights before school as well as morning so everyone knows what they have to do and when. If you stick to it it will become just a normal part of your day. And don’t they say that if you keep doing something every day for a month it becomes a habit? Oh – and no tv in the mornings, it’s impossible to get kids dressed, fed and packed and out the door if they’re stuck in front of the tv watching their favourite show.

  30. Prep. Prep. Prep.
    Start early, like on Sundays and prepare for the week ahead. Have sandwiches maw and frozen so you only need to grab them each morning and go. Have containers of chopped fruit ready to grab anytime anyone is hungry. Make up school lunch packs, so again, they can grab and go.

  31. Start a What’s Ap group with other mums from your child’s grade at school. You won’t believe the number of times another mum/ parent will remind you of something at the last minute and save you! Or if something happens and you’re late to school pick up, someone can tell your child. And also, buy a label maker instead of paying a zillion bucks for labels for each child!

  32. Be prepared. Get lunch ready the night before if you can. Label everything – a label maker is a great investment.

  33. One word – preparation. I put aside an hour or so every Sunday to make lunches for the week ahead – sandwiches are made and put into the freezer, snacks are packaged and either frozen (or refrigerated) as well, or put into little plastic drawers in the pantry. I get a sandwich out each night for the next day, my son chooses one other frozen or cold item, and then chooses 2 snacks from the little plastic drawers, as well as some fresh fruit. And in summer, I half-fill drink bottles with water and freeze them on their side. It’s easy enough to top them up with water the next morning without having a huge solid chunk of ice sitting in the bottom!
    Seeing as my husband and I are both gone for 12 hours a day, this makes things that little bit easier!

    Get the kids to do it! Mums have enough to do. My kids need to pack their own school bag, lunch bag, sort out uniforms and polish their shoes. These are life skills. And I get my life back.

    Meet your new teacher prior to back to school, this’ll provide familiarity for your child which in turn will provide a sense of belonging and security. If a meet in person isn’t an option, contact the school for a photo and some background information, teachers interests and hobbies etc…

  39. My tip would be to pack what they like to eat , otherwise it will stay in the box or go in the bin and that’s a waste and very frustrating! Keep it simple and easy mix it up and think ahead!! 🙂

  40. Preparing on the weekend the lunches for the week. Bonding time for the kids to cook up a feast they’ll love. Knowing what goes into making them shall see my kids not waste what they’ve cooked.

  41. My 3 girls and son love to snack on whatever mum has baked up that week. Today is bannana pancakes and bannana cake. Using up those pesy left over spotted bannanas. Last week i baked a pumpkin cake was quick and easy and literally was gone in 1.5 days lol The noddle recipes above look awesome i’ll be giving them a go next week for sure. They will love them.

  43. My back to school tip is to plan early: get your back to school shopping done in advance, lay out uniforms & pack bags the night before. Don’t leave it til the last minute.
    After school my kids love a Milo and a homemade snack (banana and choc chip muffins are favourites)

  44. It never fails to amaze me how organising school bits and bobs in the evenings helps my morning run more smoothly. Only problem with my tip is it’s often a struggle when I just got comfortable with my chocolate and hubby to watch Netflix! I’ll admit though it does make my mornings go a little less bumpy than a Maggi noodle and slightly more smooth like spaghetti, so once I find the motivation, it always pays off (so long as he pauses the show!). After a busy day, my kiddos love a ‘Mum’s Surprise’ which is a lottery of home baked treats in the freezer consisting of scrolls, muffins and ‘I-forgot-I-baked-those’ slices!

  45. best back to school tip is get the week sorted with a zip top bag, a couple of snacks and a marker. name each bag or put the day on it, put in 2 snacks and sit in a container. once all done and easy to see then the kids csn help pack lunches each day.

    my kids love to have peanut bubble crunch. we make it together and cut it up in portions big enough so they only habe 1 and then thats it till dinner.

    After school my son always has a snack on the way home – usually yoghurt and a biscuit. When we get home he loves camembert cheese and crackers!

  47. On Sunday, I cut and dived some vegetables and fruits for a week. Make slice or muffins as well. It’s much better than take store bought snacks!

  50. Best back to school tip – we made a little heart for my son to take to school in his pocket and if he feels a bit anxious then he hugs it with his hand. Other tip for mums is to get organised – it is a sanity saver with all bags in the one bag stand, sandwiches frozen and prepared ahead as it saves so much time in the morning. 🙂

  51. My tip is to cook up and freeze lots of snacks for the lunches, ie muffins, sweet and savoury, muesli bars, sweets etc. Saves time, money, stress and you can make them a lot healthier.

  53. A use Decor Microsafe Soup Mugs , break 1 packet of noodles between 2 cups. Then the kids add, peas , corn, ham to it, top with boiling water, close vent, let sit for 2 minutes . Drain and instant pot noodles . one loves to add tuna to his , the other creamed corn.

    I like to get Master 7 and Miss 5 involved with making their own lunches, getting creative with healthy yet delicious home-made snacks and sandwiches, from baking slices, breads and buns to cutting veggies and fruits into unique shapes! The kids enjoy and feel invested in the process and their lunch boxes almost always return home empty! Yes, the preparation takes more time, but it pretty much becomes a regular family activity we look forward to!

During the holidays I make lots of healthy snacks and freeze them in individual portions, easy to grab in the morning for the lunchbox, they help keep everything else cool and I stress less about what to pack knowing he has healthy treats

  63. Keep the build up to the new school year fairly low key and with little stress. Emphasise the positives and begin a bit of fun learning activities at home before classes start to establish routines.

  64. My top tip is get an insulated food mug. My daughter loves taking either her favourite leftovers or lunchbox winners like mashed veg and tuna balls or chicken and noodle balls which I’ve filled the freezer with for quick, healthy and HOT lunches in an instant.

Create games depending on age and school type. Have one for each kid. This will only be great for kids who already like school. Those who have a hard time going back or just don’t like school need a sensitive,slow and gentle prep over a longer time. Talk to other mums you know in the friendship circle as YOUR ALL IN IT TOGETHER.

    TIP: Buy up school shoes when you see them / good deals ahead because you can bet your bottom dollar when you need a pair there are none and you need something pronto!

  73. So many great things going on in classrooms these days. I work in a kindergarten room and we use Seesaw app. Anytime during the day we can send photos, messages and clever things your kids are up to through out the day. Also great for upcoming news or if you have questions for the teacher but can’t make drop offs to speak with them. So my biggest tip is take advantage of these great new technologies. The kids love and so will you.

    My tip is: let kids wear their new school shoes in for several days before the big day! address any problems that cause discomfort such as socks that aren't the right thickness. There is nothing worse than the pain of blisters ruining the very first day of school!

I have learnt over the years as a school mum is don’t put so much pressure on yourself regarding lunch boxes….I have tried every single lunch there is, fancy, creative, healthy and my daughter is happy with a ham sandwich…every single day, if she is happy then all is good!
