As you’ve probably noticed, I’ve been sharing a few recipes around beautiful rice. It was a little challenge that SunRice set for a few bloggers. There’s been cooking superstar recipes from Poh, making goodies using a Mystery Box Challenge, sharing our own recipes and a few other rice-y goodness.
It’s been fun, and I’ve loved the challenge. Rice is my fall-back food for the girls. I know they’ll always eat it, and it’s one food they never snub.

The recipe I’m sharing today is one that I whipped up on a chilly Sunday recently. It was super cold, and we wanted something warm. I love, love, love brown rice, so that addition to these fritters made everything awesome. I love the trick of using rice from the microwave rice packs. It’s great to use in Fried Rice, and also in this dish. You can of course use any leftover rice, but this way is good if you don’t have time to cook and cool the rice.
CHEESY VEGETABLE & RICE FRITTERS
Ingredients
1 cup SunRice Microwave Rice, uncooked
3/4 cup tasty cheese
3 eggs, lightly beaten
1 medium carrot, grated
1 small zucchini, grated
1/4 plain flour
Salt and pepper
Oil, to shallow fry the fritters
Salad to serve
Method
♥ In a large bowl mix the rice, cheese, eggs, carrot, zucchini, flour, and salt & pepper. Once combined put aside.
♥ Place oil in a large frying pan, and place on a moderately high heat. Place balls of mixture into the hot pan, and push down into a flat fritter shape. Cook for 2-3 minutes, or until golden brown and crisp.
♥ Serve the fritters warm with salad.

Yum my kids would love these (who am I kidding so would I!) we never get the microwave rice so would that be 1 cup cooked normal rice?
Yes, just as long as it’s cooked and cooled. 🙂

I might have to take skin of zucchinis but my fuss bums might eat this – I sure would – with some sweet chilli sauce, YUMMO!

The microwave rice is actually mostly cooked and you’re just reheating it, so it’s fine in the recipe. Try it. 🙂
