The easiest carbonara noodles (made with instant noodles!)

These creamy carbonara noodles are made with instant noodles, bacon, eggs and parmesan for a quick, budget-friendly dinner the whole family will love. Ready in under 20 minutes!

This one is a bit of a “how have I never done this before?” recipe.

It’s everything you love about a classic carbonara… creamy, salty, comforting… but made with instant noodles instead. And I have to say, it works so well.

It’s quick, budget-friendly, and perfect for those nights when you’ve got minimal energy but still want something that feels a little bit indulgent.

Crispy bacon, a silky egg and parmesan sauce, sweet pops of peas… and it all comes together in one pan in under 20 minutes.

This is the kind of dinner that feels like a hug, without the effort.

👩‍🍳 How to make carbonara noodles

  1. Cook the bacon

    In a large pan, cook the chopped bacon over medium heat until golden and crispy. Set aside, leaving a little of the bacon fat in the pan for flavour.

  2. Cook the noodles

    Cook the instant noodles according to packet directions.
    You can choose to discard the seasoning, or add a small amount for extra flavour — totally up to you.
    Drain and set aside.

  3. Make the creamy sauce

    In a bowl, whisk together:
    2 whole eggs
    2 egg yolks
    thickened cream
    grated parmesan
    Season with cracked pepper.

  4. Bring it all together

    Remove the pan from heat (this is important so the eggs don’t scramble).
    Add the cooked noodles, peas and bacon to the pan, then pour over the egg mixture.
    Toss quickly to coat everything — the heat from the noodles will gently cook the sauce and make it creamy and glossy.

  5. Serve

    Serve immediately with extra parmesan on top.
    Eat it hot, straight from the bowl, and enjoy.

Ingredients

  • 2 rashers bacon, chopped
  • 4 packs chicken instant noodles
  • 4 eggs (2 whole + 2 yolks)
  • 150ml thickened cream
  • 3/4 cup grated parmesan
  • 1 cup peas
  • Cracked pepper, to taste

Instructions

  1. Cook bacon in a large pan until golden and crispy.
  2. Cook noodles according to packet directions. Drain and set aside.
  3. In a bowl, whisk together eggs, cream and parmesan. Season with pepper.
  4. Remove pan from heat. Add noodles, peas and bacon.
  5. Pour over egg mixture and toss quickly until creamy.
  6. Serve immediately with extra parmesan.
