I drizzled this one with white chocolate, but you could add an icing, or leave it plain. It really is a versatile slice that is easy to mix up a little. Best of all, it’s got that nice, satisfying crunch to it. Perfect with a cup of tea on a day like today… if only I had some left!

How to make my Nutella Weetbix slice recipe

1. Preheat and prep your tin

Preheat your oven to 180ºC (or 160ºC fan-forced).
Line a slice pan with baking paper, making sure the edges hang over for easy removal later.


2. Mix the dry ingredients

In a large mixing bowl, combine:

  • Crushed Weetbix
  • Desiccated coconut
  • Self-raising flour
  • Brown sugar

Stir until everything is evenly mixed.


3. Add the wet ingredients

Add in the Nutella, melted butter, vanilla extract, and egg.
Mix well until everything comes together and forms a thick, slightly sticky mixture.


4. Press and bake

Spoon the mixture into your prepared pan.
Press down firmly using the back of a spoon or spatula to create an even base.
Bake for 15 minutes, or until the slice is golden brown and just set in the centre.


5. Cool and drizzle

Allow the slice to cool completely in the pan.
Drizzle with melted white chocolate using a spoon or piping bag for extra flair.


6. Slice and serve

Once the chocolate has set, cut into squares or bars.
Store in an airtight container — if they last that long!

Crispy Nutella Weetbix Slice Recipe

Ingredients

5 Weetbix, crushed

1/2 cup desiccated coconut

1 cup self-raising flour

1/2 cup brown sugar

130g butter, melted

A dash of vanilla extract

1/3 cup Nutella

1 egg

120g white chocolate, melted


Instructions

  1. Preheat your oven to 180ºC (or 160ºC if you’re using a fan-forced oven). Line a slice pan with baking paper.
  2. In a bowl, combine the Weetbix, coconut, flour, and sugar. Mix to combine. Add in the Nutella, butter, vanilla and egg. Mix until well combined.
  3. Press the mixture into the prepared tin and bake for 15 minutes, or until the slice is golden brown and just firm.
  4. Once cooled, drizzle the slice with the melted white chocolate and then cut into small squares to serve.
