We had friends over for breakfast the other day and I thought while I was doing my ‘a Thermomix recipe a day‘ it was fitting to make them eggs benedict for breakfast. Plus, they were running the Gold Coast marathon the next day so I knew an indulgent breakfast would be quickly burned off.
As I was making breakfast, Paul and Hubby were chatting over the kitchen bench about anything and everything, I interrupted to ask Paul, “Do you want hollandaise?”
“Nah, we’re just here for the weekend.”
It took me a moment to process, and then Hubby and I cracked it {laughing}, looked at Paul and said “not HOLIDAYS, HOLLANDAISE.”
We all laughed. And you totally know we’ll be saying “Happy Hollandaise” to them forever and ever.
Now onto the recipe. I know you can make hollandaise by hand without a Thermomix. I never tried, but I hear it’s easy. I love that I throw everything into the machine and 8 minutes later I’ve got myself a fancy brekky. It’s decadent but delicious and definitely worth trying. Tip: Don’t scrimp on the lemon.
Thermomix Hollandaise Sauce
Ingredients
4 egg yolks
130g butter, chilled and cut into cubes {recipe says unsalted butter, I never use it}
20g freshly squeezed lemon {about half a lemon}
sea salt and black pepper to taste
Method
♥ Insert the butterfly. Place all ingredients into the mixing bowl. Cook for 8 minutes at 90 degrees on speed 3. Serve straight away.
Tip: Do not try reheating the sauce in the microwave. It turns into a scrambled egg mess. Cook just before you are ready to serve. This recipe is from the Everyday Cookbook.
We served ours on sourdough toast with some spinach and bacon. Dreaming about it right now.
This is exactly my dreamy indulgent breakfast too! Love Hollandaise, it was one of the first things I had to make for us when Thermomix first arrived. Can never have too much Hollandaise on my plate 😉
