Spaghetti & Meatballs.

efore I had Lacey I was a good cook. I hosted many dinner parties, always cooked for Christmas and baked most weekends. And then I gave birth and I lost that love for it. Hubby took over the cooking duties {although he did do a lot of cooking anyhow} and I never really had the need or desire to cook. Until now.

I have boxes of recipes that I’ve kept and never attempted. Many, many cookbooks that have sat, neglected, in the bookshelf until my cooking mojo returned. I’ve always dabbled in sharing food and recipes here, on my blog, but you’ll be seeing them more now that I have to cook. Doesn’t this make it more fun?
Ingredients
500g beef mince
3/4 cup breadcrumbs
1/2 small red onion, finely chopped
2 tablespoons coarsely chopped fresh flat-leaf parsley
1 clove garlic, crushed
2 tablespoons milk
2 tablespoons tomato paste
2 tablespoons olive oil
2 x 400g can chopped tomatoes
1 teaspoon sugar
400g dried spaghetti
1/3 grated parmesan to serve
Method
1. Combine mince, breadcrumbs, onion, parsley. garlic, milk and half the tomato paste in a bowl + mix well. Roll into even balls.
2. Heat oil in a large frying pan over high heat. Cook meatballs {in batches} until browned all over. Set aside.
3. Add crushed tomatoes and tomato paste to {now empty} frying pan. Bring to the boil.
4. Simmer for 10 minutes. Add sugar.
5. Add meatballs to sauce, reduce heat to low and simmer {uncovered} for 5 minutes.
6. Cook spaghetti in a large saucepan of boiling water until al dente. Drain.
7. Serve by dividing spaghetti among 4 serving bowls, spoon meatballs and sauce over. Sprinkle with cheese. Serve with salad {if you so desire}.

  1. Lovely. Meatballs are a firm fave here. My recipe is nearly the same, except I bake the meatballs rather than fry and then use the slow cooker…xx

  2. I wish I had the patience to do meatballs, but I always run out and then I just slap the mince into the dish and, oh oh, spaghetti bolognaise AGAIN…!?! x

  3. Mouth-watering recipe Chantelle. Although you really had me in the first few lines re: losing cooking libido. Becoming a mum and NOT having a dishwasher. Let's just say too many pots n pans equals too much washing up equals crazy mumma. I'm just too soft. Glad you're back in the swing of it tho x
