When it comes to make-ahead school lunches, one of the easiest options is pizza scrolls. With just three ingredients, and super budget-friendly – this recipe is a winner!

If you’re after a quick, budget-friendly snack that kids (and grown-ups) actually want to eat — these cheesy scrolls are your new go-to. They’re made with just a few simple ingredients, come together in no time, and are perfect for lunchboxes, after-school snacks, or a savoury bite on the go. You can make a batch ahead of time and freeze them too, so you’ve always got something tasty ready to grab when the lunchbox panic hits!
Scroll variations to try
One of the best things about these cheesy scrolls is how easy they are to customise. Once you’ve got the basic method down, you can mix things up to suit your tastes, what’s in the fridge, or fussy little eaters. Here are a few ideas to get you started:
🧀 Ham & cheese: Add a layer of sliced ham before rolling — classic, tasty, and always a hit.
🌱 Spinach & feta: Swap tomato paste for a little olive oil, then crumble feta and sprinkle baby spinach on top.
🍕 Pizza scrolls: Add olives, salami, capsicum, or pineapple for a pizza-inspired scroll.
🌽 Veggie-packed: Grate in some zucchini, carrot or corn for a sneaky veggie boost.
🌶 Spicy adult version: Add chilli flakes, jalapeños or a dollop of pesto for a grown-up twist.
It’s a great way to get creative in the kitchen and tailor scrolls to everyone’s tastes — or just use up what’s left in the fridge before the next shop!

How to make pizza scrolls
- Pastry prep
Preheat your oven to 200ºC and line a baking tray with baking paper. Lay out your pastry sheet (or sheets if you’re making a bigger batch) and let them thaw completely before getting started.
- Paint your pastry
Spoon about 1 tablespoon of tomato paste onto each pastry sheet and spread it out evenly with the back of a spoon. Don’t worry if it’s not perfect — rustic is delicious!
- Sprinkle away
Sprinkle a generous handful of shredded cheese over the top, making sure it’s spread right to the edges. Then roll the pastry up tightly into a log shape. Slice into 12 even pieces.
- Roll up! Roll up!
Place each scroll spiral-side up onto your prepared tray. Pop them in the oven and bake for around 12 minutes, or until they’re golden, crispy, and smelling amazing.
- Time to eat!
Time to taste-test! These are so good straight from the oven — melty, cheesy goodness. Or let them cool and pop them into the freezer. They’ll keep for up to four months and are perfect for popping into lunchboxes when you need a quick win.
