Pizza Salad

When you’re looking for an easy, meal-in-one salad, this Pizza Salad is the winner. With mozzarella and salami, and loads of crunch, it’s a whole meal in one.

It’s salad season, and I love salads – because they’re so fresh, and they rarely require turning on the oven to create. This Pizza Salad has proteins with the cheeses, salami and chickpeas, so it’s filling, while still have freshness from the two different types of lettuce; iceberg and cos lettuce.

What to serve with Pizza Salad

While pizza salad is a meal in itself, it also works served alongside other proteins, or even (dare I say it?) pizza as well. I like it served with BBQ chicken or even steak.

Pizza Salad

Ingredients

Units Scale

1/2 iceberg lettuce, chopped

1 baby cos lettuce, chopped

1 can chickpeas, rinsed and drained

150g salami slices, chopped

2 cups mozzarella cheese, grated

DRESSING

1/3 cup extra virgin olive oil

2 tablespoons red wine vinegar

1/4 cup grated parmesan cheese

1 garlic clove, minced

3 teaspoons Dijon mustard

Salt and pepper


Instructions

  1. Place all of the salad ingredients into a large salad bowl. Toss to combine.
  2. In a small bowl or jar, place all of the dressing ingredients, and shake well to combine, or whisk together until combined.
  3. Pour the dressing over the salad, and toss to dress. Eat immediately.

Notes

To make ahead: Prepare all the salad ingredients and leave the dressing off until ready to serve.

Mozzarella cheese: It’s best to grate your own cheese, as it’s softed than the already grated cheese – but to save time feel free to use whatever works!
