1/2 iceberg lettuce, chopped
1 baby cos lettuce, chopped
1 can chickpeas, rinsed and drained
150g salami slices, chopped
2 cups mozzarella cheese, grated
DRESSING
1/3 cup extra virgin olive oil
2 tablespoons red wine vinegar
1/4 cup grated parmesan cheese
1 garlic clove, minced
3 teaspoons Dijon mustard
Salt and pepper
Instructions
- Place all of the salad ingredients into a large salad bowl. Toss to combine.
- In a small bowl or jar, place all of the dressing ingredients, and shake well to combine, or whisk together until combined.
- Pour the dressing over the salad, and toss to dress. Eat immediately.
Notes
To make ahead: Prepare all the salad ingredients and leave the dressing off until ready to serve.
Mozzarella cheese: It’s best to grate your own cheese, as it’s softed than the already grated cheese – but to save time feel free to use whatever works!
