This Christmas the Starlight Children’s Foundation is aiming to raise $1.2 million to grant wishes for seriously ill children around Australia. That’s a lot of lovely wishes. I’ve read a bit about the way they work, and the wishes they grant and it’s beautiful. People are just amazing.
To help raise some of that money the team at Starlight have created a cookbook filled with recipes from some of the best chefs from around the country. You can buy a copy of Dinnertime here. Below is just one recipe from the cookbook from the deliciously talented Peter Gilmore.
Ingredients
2 ripe bananas
2 tbs water
100g unsalted butter, softened
140g {3/4 cup} soft brown sugar
2 eggs
150g {1 cup} self-raising flour, sifted
1 tsp baking powder
1 tsp vanilla essence
vanilla bean ice cream, to serve
Butterscotch sauce
50g unsalted butter
120g {2/3 cup} soft brown sugar
250ml pouring cream
Method
♥ Preheat the oven to 180 degrees celcius.
♥ Grease and flour a pudding bowl or a square cake tin.
♥ Mash the bananas and place in a saucepan with the water and cook gently for a couple of minutes.
♥ Cream the butter and sugar in an electric mixer and then add the eggs, one at a time. Fold in the flour and baking powder, then add the cooked bananas and vanilla essence, mixing well. Place the mixture into the prepared bowl or tin and bake for approximately 35 minutes or until skewer is inserted and comes out clean.
♥ To make the butterscotch sauce, place all the ingredients in a saucepan and heat gently, while stirring to dissolve the sugar. Let the sauce simmer for a few minutes and continue to stir. Remove from the heat, ready to reheat when required.
♥ Serve the pudding hot with warm butterscotch sauce and vanilla bean ice cream. Serves 6-8 people.
