No-bake Lattice Cheesecake Slice Recipe

You’ve seen this no-bake slice around, haven’t you? I’ve seen it growing up. It was always at the parties my parents and their friends or our family had. It was always there. In all those years though, I never tried it. I don’t know why, because I certainly have a sweet tooth, but I think it may have had a radar for things a little more chocolate-y than this.

But I was flicking through my Ma’s cookbook and the recipe was there. Apparently some Aunty I can’t remember ever meeting used to make it and everyone raved about it. So I made it. I sampled a piece, as did the cheesecake-loving husband and we rated it. It was good. All these years I’ve been missing out.

No-bake Lattice Cheesecake Slice Recipe

To be honest, this couldn’t be easier to make. The only hard thing was trying to find a darn container that would sit the biscuits in nicely. I emptied almost every cupboard in my kitchen, and in the end just ended chopping some of the biscuits to fit the container.

Also, I only used one packet of biscuits because I wanted to make the filling quite thick. Depending on how many people you want to serve, you could do the same.

No-Bake Lattice Cheesecake Slice

Ingredients

2 packs of Lattice Slice bisuits
200g cream cheese, at room temperature
125g butter, at room temperature
1/2 cup caster sugar
1 tsp vanilla essence
1 lemon, juiced
1/4 boiled water
2 tsp gelatine powder

Method

♥ Place the gelatine powder into the water, and stir to combine. Allow to cool while you make the rest of the slice.
♥ In a bowl, beat together the cream cheese, butter and sugar. Once nice and creamy add in the remaining ingredients, including the gelatine and water mix.
♥ Line a tray or dish with baking paper, and line with the lattice biscuits {sugar side down}. Spread the cream cheese mix over the biscuits and then top with the remaining biscuits. Place into fridge until firm.

    • I have made these for a GF friend using those sweet rice biscuits which are the shape of a doughnut …. they came out really well by piping the cream cheese mixture between two biscuits … enjoy! 🙂
