I don’t want to sound like I’m throwing a pity party, but well… I kinda am. At some point last week I hurt my back. There’s nothing like back pain, well I know nothing like back pain. It’s debilitating, and makes me so grateful for my health when I have it {and how dearly I want my normal, healthy back to return}.

If you’re going to throw a pity party, the catering should most definitely include comfort foods. I’m thinking gooey chocolate puddings with ice cream, and macaroni cheese. {To be honest, I am really looking after myself and the most comfort I’ve really indulged in is porridge, but that doesn’t make for a very cool pity party!}.

Nigella Lawson’s Simple Macaroni Cheese

Ingredients

250g macaroni
250g tasty cheese, grated {Nigella uses mature cheddar}
250ml evaporated milk
2 large eggs
Salt and pepper to season

Method

♥ Preheat oven to 220°C.
♥ Cook the macaroni according to the instructions on the packet. Drain and then put back into the hot saucepan.
♥ While the pasta is cooking, place the cheese, evaporated milk, and eggs into a processor {or Thermomix} and blitz to mix. Don’t want to get out the mixer? Just place everything in a bowl and mix to combine.
♥ Pour the cheese sauce ingredients over the cooked pasta, and stir to combine everything. Season with a little salt and pepper.
♥ Place into a baking dish, and put into the oven for 10-15 minutes until the cheese melts and it’s cheesy perfection.
♥ Eat with a salad, or simply grab a spoon and dig in.

  1. That looks very delicious. Sorry you are in pain with your back I feel for you as I know that pain. I would like to tell you that I love your blog I’m a Aussie living in the States and your blog is like a piece of home.

  2. Chicken soup with matzo ball dumplings and a whole heap of noodles. Or failing that just a shed load of dumplings. Because dumplings make everything better!

  3. Yum! I love mac & cheese but I’ve never made it myself (other than years ago out of a box…). I empathise with the back pain. For me, it’s my hips – late pregnancy and pelvic separation and instability. It’s so debilitating when you can’t move freely. Hope your back eases up soon 🙂
