Mushroom and Feta Gozleme Recipe

Hello you. On Saturday just gone we arrived back from beautiful Singapore, where were played and ate the days away {so many dumplings!}… so I was so excited to be able to collapse into my own bed again and to cook in my own kitchen.

Is that weird? I miss those homely things when I’m away. I miss my space, my washing machine, my bed and cooking.

What did I make? Well, I whipped up a few white chocolate mudcakes for a friend’s birthday this coming weekend {I froze them in case you’re wondering} and I made the family a late lunch of mushroom and feta gozleme.

I shared a photo on Instagram of our lunch and people asked for the recipe, and also asked, “What’s a gozleme?” I think they’re Turkish, but I know they’re delicious. It’s kinda like a dough filled with cheese and spinach and either mince or a mushroom filling. We opted for mushroom, because I love them, and it’s an easy way to get the kids to eat them.

I know when it comes to making your own dough, a lot of people put it in the too hard basket… but this one isn’t hard. It’s only two ingredients and kinda fun to make with the kids. Lacey did most of the work on this one for me.

Mushroom and Feta Gozleme Recipe

Serves 4

250g self-raising flour
200g Natural Greek yoghurt

1 tablespoon olive oil
1 green onion, thinly sliced
200g button mushrooms, sliced thinly
1 clove garlic, crushed
100g baby spinach
50g feta, crumbled
50g tasty cheese, grated
1 tablespoon olive oil, extra for cooking

♥ In a medium sized bowl, place the flour and yoghurt and mix to combine. Turn out onto a floured surface and bring to together by kneading. Divide the mixture into 4 equal parts. Set aside.
♥ In a frying pan, heat oil over medium heat. Cook mushrooms until soft, add garlic, green onion, and baby spinach until the spinach has wilted. Place into a bowl and cool for 5 minutes. Add feta and cheese.
♥ Roll out the one ball of the dough into a circular shape. Place filling inside and fold over into half. Seal the edges by pushing down with your hands.
♥ Heat oil in frying pan over medium heat. Place the gozleme in the pan and cook until browned each side. Repeat with the rest of the dough and mushroom mixture. Serve with lemon wedges.
