Step-by-step instructions

  1. Prepare the pork

    Remove the skin from the pork, leaving as much fat as you can.
    (If that feels too hard, you can remove it after cooking, but removing it first helps the flavour soak in better.)

  2. Season the meat

    Rub the taco seasoning, salt and pepper all over the pork so it’s well coated.
    Place the pork into your slow cooker.

  3. Add the flavour base

    Add the diced onion, crushed garlic and chopped jalapeño (if using) over the top of the pork.
    Pour over the orange juice.

  4. Slow cook

    Place the lid on and cook on high for 6–8 hours, or until the pork is tender and falling apart.

  5. Shred the pork

    Once cooked, use two forks to shred the pork.
    At this point, you can remove any excess fat if needed.

Ingredients

  • 1 pork shoulder (2kg or more)
  • 1 packet taco seasoning
  • Salt and pepper
  • 3/4 cup orange juice
  • 1 onion, diced
  • 3 garlic cloves, crushed
  • 1 jalapeño, chopped (optional)

Instructions

  1. Remove the skin from the pork, leaving the fat.
  2. Rub with taco seasoning, salt and pepper.
  3. Place pork into the slow cooker.
  4. Add onion, garlic and jalapeño on top.
  5. Pour over orange juice.
  6. Cook on high for 6–8 hours.
  7. Shred with two forks.
  8. Divide into two portions for two meals.
  9. Optional: Heat oil (about 2tbs) in a frying pan over medium-high heat. Add shredded pork and cook until crispy and golden on the edges.
