- 1 pork shoulder (2kg or more)
- 1 packet taco seasoning
- Salt and pepper
- 3/4 cup orange juice
- 1 onion, diced
- 3 garlic cloves, crushed
- 1 jalapeño, chopped (optional)
Instructions
- Remove the skin from the pork, leaving the fat.
- Rub with taco seasoning, salt and pepper.
- Place pork into the slow cooker.
- Add onion, garlic and jalapeño on top.
- Pour over orange juice.
- Cook on high for 6–8 hours.
- Shred with two forks.
- Divide into two portions for two meals.
- Optional: Heat oil (about 2tbs) in a frying pan over medium-high heat. Add shredded pork and cook until crispy and golden on the edges.
