Eat: No-bake cheesecake

My father-in-law is a big fan of cheesecake so for his 70th birthday he requested one in lieu of a cake. I sent an email with a list of ingredients to buy, and packed a spring form tin and my trusty beaters in my luggage so I was prepped and ready to go when we arrived.

Unfortunately the day we arrived he ended up in hospital, not allowed to eat for a week. Seeing that the cake was a no-bake frozen cheesecake I decided to make it and keep it in the freezer for when he returned home {which should be soon!}. Of course we celebrated and had a slice of it on his day of days.

Ingredients
450g cream cheese (at room temp)
200 ml double cream
110g caster sugar
1 tsp lemon juice
1/2 tsp vanilla extract
1/2 cup melted butter
10 digestive biscuits

♥ Crush the digestive biscuits in a food processor {or do as I did: put them in a sandwich bag and whack with a wooden spoon until crumbly enough}.
♥ Heat the butter in a large pan on low. Add the biscuit crumbs and stir until the butter is absorbed. You’ll know when their done as you’ll smell a toasted aroma – yum!
♥ Spread over the base of a spring form tin. I covered the base in baking paper, but you might not need to if you’re feeling brave! Smooth out using the bottom of a glass. Pop into the freezer.

♥ In a clean bowl whip the cream until it forms soft peaks. Don’t over whip.
♥ In another bowl gently soften the cream cheese with a spoon. Add the lemon, vanilla extract and sugar.
♥ Fold in the double cream.
♥ Pour filling onto base and freeze.

♥ Freeze for 2 hours and then you’re ready to serve!

This recipe is very basic so you could really mix it up however you liked: put fruit on top, or make a chocolate biscuit base & drizzle chocolate on top. You could really do whatever you liked.

  1. Yum! I definitely don't do any cooking on my birthday – Cheesecake shop for me (Jaffa Mud Cake – bliss!!). My Hubby is like your Pop though – puts in an order for a Toblerone Cheesecake that I make for him when he's nice. 🙂

  2. If you're feeling a bit naughty you can also crush 3/4 of a big packet of malteasers and stir through the mixture and us the uncrushed ones to decorate.
    Goes down a treat when I take it to parties!
