You know I very much dislike the dinner time battle {I wrote about it here} so if there’s anyway I can make it easier on myself {and you!} I’ll jump at it. Coles and I will be working together for the next 12 months to bring you a recipe each month, with a big focus on easy, meals that anyone can create at home. Hopefully your taste-buds are excited already.
To kick off my first recipe, I wanted to bring you something perfect for the warmer weather. This is a salad I’ve made a few times over the past fortnight, and you can change up which vegetables you use, but I really like this combination. Another component of the meal you can switch up is the protein. For this one I used a Moroccan Spiced Chicken from the Coles Grill range {it’s pre-marinated, so jam-packed with flavour and ready for you to cook}. They also do lots of other flavours including Chilli & Teriyaki Prawn skewers, and Tandoori Chicken Drumsticks.
The Moroccan Chicken is easy to barbeque {if you’re allowed near the BBQ, which I’m encouraged not to since failing so many times} or you can pop it in the oven to cook instead.
Now onto the salad.
Roast pumpkin, beetroot, red onion, tomato, rocket, avocado & feta salad
This is so easy. Just pre-heat your oven to 180 degrees Celsius. Chop your pumpkin and beetroot {use fresh, and peel it before}, and Spanish onion and place it on a baking tray. Throw some cherry tomatoes on as well. Drizzle with olive oil. Cook until vegetables are tender and slightly caramelised {around 30 minutes}. Place rocket in a salad bowl, top with roast vegetables, chopped avocado {in season now} and some marinated feta. I like to spoon some of the oil that the feta is marinating in to give the salad a little more flavour.
It’s really such an easy, flavour-packed meal. You can do double the salad and have it over two nights, and pair it with something else from the Coles Grill range.

Oh what perfect timing!!! I’ve recently found out i’m insulin resistant and am struggling to find lovely simple foods i’m allowed to eat!! This salad sounds delish! Think a BBQ is on the cards tomorrow night 🙂
