Looking for a fresh, easy salad that goes with just about everything? This easy corn salad is one of those recipes I find myself making on repeat.

It’s crisp, colourful, packed with flavour, and somehow manages to be both a delicious side dish and a perfectly satisfying lunch on its own. I won’t lie… I’ve been known to stand at the kitchen bench eating it straight from the bowl with a fork!

It’s the perfect salad to serve alongside BBQ chicken, grilled steak, salmon, or burgers, and it’s always a hit at barbecues, picnics and family gatherings.

Homemade easy corn salad recipe

Ingredients

For the salad

  • 4 cups corn kernels (about 4 fresh corn cobs, kernels sliced off)
  • 1 cup cherry tomatoes, chopped
  • 1 Lebanese cucumber, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons fresh basil, chopped
  • 1/2 red onion, finely diced
  • 200g fetta, crumbled

How to make corn salad

  1. Prep the corn

    If using fresh corn, remove the kernels from the cobs.

  2. Make the salad

    Add the corn, tomatoes, cucumber, parsley, basil, red onion and fetta to a large bowl.

  3. Make the dressing

    In a small jar or bowl, whisk together the olive oil, lemon juice, red wine vinegar, honey, garlic, salt and pepper.

  4. Dress the salad

    Pour the dressing over the salad and gently toss until everything is well coated.

  5. Enjoy!

    Serve immediately while everything is fresh and crunchy.

Salad

  • 4 cups corn kernels (about 4 fresh corn cobs, or use frozen or canned corn)
  • 1 cup cherry tomatoes, chopped
  • 1 Lebanese cucumber, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons fresh basil, chopped
  • 1/2 red onion, finely diced

  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • Salt and pepper, to taste

  1. If using fresh corn, slice the kernels from the cobs.
  2. Add the corn, cherry tomatoes, cucumber, parsley, basil, red onion and fetta to a large bowl.
  3. In a small jug or jar, whisk together the olive oil, lemon juice, red wine vinegar, honey, garlic, salt and pepper.
  4. Pour the dressing over the salad and gently toss until everything is evenly coated.
  5. Serve immediately while the vegetables are crisp and fresh.

Notes

  • Fresh corn gives the sweetest flavour, but frozen (thawed) or canned corn works just as well.
  • Make the dressing ahead of time and store it in the fridge until you’re ready to serve.
  • Add diced avocado or grilled chicken to turn this side salad into a complete meal.
  • Toss everything together just before serving for the freshest texture.
