I was recently asked to do a thing for TV where I’d go up against two chefs, competing to see who could make the best meal. It was Masterchef-style cooking. Can you imagine how stressful that would be?
I imagine I’d set my tea towel on fire, under-cook my meat, or have my pavlova deflate right in time for serving. I said no, of course. Would you be able to do it?
Having said that, I’m addicted to Masterchef this season. I had to make sure I’ve eaten dinner before watching because it definitely makes my tummy grumble. My favourite episode might be that one where they cracked out the jaffle-maker and made toasted sandwiches. I would have made my apple pie version. Yum!
Not all the Masterchef meals have to be stress-inducing though. Coles has a new section over on Taste.com.au where you can find easy-to-make recipes that you can do at home.
There are lots to choose from, but I picked the double chocolate ice cream sandwiches. It was when we were recently staying up the coast at an apartment and I was craving some baking. These were so simple to make, and I teamed them with the Coles caramel pop corn ice cream, and they were heaven.
INGREDIENTS
225g butter, softened
1 cup white sugar
1/2 cup brown sugar
1 Coles Brand Australian Free Range Egg
2 cups plain flour
1 cup cocoa
130g dark chocolate, roughly chopped {I used buttons}
1 teaspoon salt
Tub ice cream {I used Coles caramel pop corn ice cream}
METHOD
♥ Preheat your oven to 160C. Line a baking tray with baking paper.
♥ Place the butter and sugars in a large bowl and beat with an electric mixer until pale and creamy. Add the egg and beat for 1 min or until combined. Add the flour, cocoa, chocolate and stir until a rough dough forms.
♥ Roll the dough into small balls and place onto your tray. Press down gently to flatten slightly. Bake for 12 mins. Set aside on the trays to cool completely.
♥ Place a generous scoop of ice-cream on top of 1 biscuit. Top with a second biscuit. Repeat with remaining biscuits and ice-cream.

Oh my goodness. I am addicted to Masterchef, but every time I watch it, I feel relieved that I am not one of the contestants! I can’t cook under pressure. I love cooking because I do it to relax! That show would kill me!! Also, those sandwiches look AMAZING.
Yes, it would be so stressful, wouldn’t it? I get a mystery box and just cry because I couldn’t think of anything!
I used to work as a chef, but I’m definitely more of a cook than a chef! You get a huge adrenaline rush from the stress and pressure of it. One of the scariest things I have ever done, but also something I’m very proud of, was a cooking demonstration, I had to talk and not chop my fingers off at the same time, in front of lots of people!
