How to make corn relish cob dip

  1. Prepare the cob loaf

    Preheat your oven to 170°C (fan-forced). Cut the top off your cob loaf and carefully hollow out the centre, keeping the bread chunks to use later for dipping.

  2. Mix the dip ingredients

    In a mixing bowl, combine 400g sour cream, a 250g jar of corn relish (I recommend MasterFoods), and 3 finely chopped spring onions. Stir until well mixed.

  3. Fill the loaf

    Spoon the corn relish dip mixture into the hollowed-out cob loaf. Place it on a baking tray.

  4. Bake until warmed through

    Bake the filled cob loaf for 20 minutes, until the dip is heated and the bread has a lovely crust.

  5. Toast the bread chunks

    Add the cob lid and bread chunks to the tray and bake for another 5 minutes until golden and toasty.

  6. Serve and enjoy

    Place the warm cob dip on a platter, surrounded by the toasted bread pieces. Serve immediately and watch it vanish!

1 cob loaf

400g sour cream

250g jar corn relish (I recommend MasterFoods)

3 spring onions, finely chopped


Instructions

  1. Preheat oven to 170°C (fan-forced).
  2. Slice the top off the cob loaf and remove most of the bread from inside, keeping the pieces for later.
  3. In a bowl, mix together sour cream, corn relish, and spring onions.
  4. Spoon the dip into the hollowed cob loaf and place on a baking tray.
  5. Bake for 20 minutes, or until the dip is warmed through.
  6. Add the bread chunks and lid to the tray, and bake for a further 5 minutes until golden.
  7. Serve warm, with the toasted bread pieces for dipping.

Notes

  • Swap sour cream for cream cheese or Greek yoghurt for a thicker texture.

  • Add crispy bacon, capsicum, or grated cheese for extra flavour.

  • Best eaten fresh from the oven, but leftovers can be stored in the fridge for up to 2 days.

  • You can also serve the dip cold — just mix and fill the cob without baking.
