Chocolate Self-Saucing Pudding.

and I were home alone, the night was cold and our tummies were rumbling. Hubby was away and we wanted chocolate. I’d felt like baking all day, but couldn’t be bothered going out for groceries. I searched through cookbooks to find something I could make with what we had, and this self-saucing chocolate pudding won.

I was given this cookbook from the Australian Institute of sport a month or so ago, and had intended on making the cover recipe {spaghetti and meatballs} for a while, but Hubby makes a mean spaghetti bolognese, so that always wins {not that I put up much of a fight to do the cooking!}.
It’s filled with lots of healthy recipes from lunches, to desserts and dinner in between. One day I will make the meatballs, there’s also a healthy carbonara and lasagne that looks a little bit scrumptious too.

The chocolate self-saucing pudding was super easy. Lacey and I loved it. It can even be done in the microwave in ten minutes.
Here is the recipe:
Chocolate Self-saucing pudding
Serves 6
1 cup self-raising flour
2 tbs cocoa
2/3 cup caster sugar
30g melted butter
1/2 cup skim milk
sauce
1/4 cup cocoa
3/4 cup brown sugar
1 1/4 cups boiling water
1. Preheat oven to 180 degrees celcius.
2. Sift flour and cocoa into a large bowl, stir in sugar and make a well in the centre.
3. Whisk butter and milk together and pour into dry ingredients. Stir until combined.
4. Spread pudding mix into a 8 cup capacity baking dish.
5. To make the sauce, combine the cocoa and the brown sugar together in a small bowl and then sprinkle over pudding mixture. Gently pour water over the top. Bake for 40 minutes.
6. Serve with low fat custard or ice-cream.
To cook in the microwave cook on high for ten minutes.

  2. I made this (well basically the same recipe, in the microwave) last night for dessert, and *shhhh* but I just ate the leftovers for tea!

  3. At 24 weeks pregnant, reading this last night jumped out at me so I had to make it! I was so determined to get the thing in the oven that I forgot to add the sugar to the cake part! Before it finished cooking I realised and sprinkled it on top and added more water and put it back for 10 minutes. It still came up great and I am ate two servings with yummy custard! Thanks for the inspiration to feed my bump; she loved it!

  4. I just got sent that book in the mail this week as well. I should try that recipe. YUM! I love chocolate pudding and the colder the weather gets the more I want warm things.

  5. Telle, this pudding is awesome!! I used to love the 3-min mug cake as a quick dessert treat, but this is the new winner in our house. Such chocolatey saucy goodness!!!
