Chocolate fudge cake with condensed milk icing

My aunty used to make the most delectable chocolate fudge cake a child could ever devour. When my own Pop was in a hospice and really sick, he asked me to make it for him. I was 20 at the time and in denial that he was going to pass away, but I knew that he was really, really sick. I put so much love into that cake, and even made it in the shape of a heart. That cake meant to much to him. It was like I’d made him the happiest man in the world, with one simple cake.

I’d actually forgotten about that moment until I started to write this blog post, and of course I’m in tears as I type. I’m so sensitive at the moment, even fudge cake is making me into a big hot mess!

I don’t have that recipe from so many years ago, but the latest GoodFood magazine had a recipe for it inside, and I knew I had to make it as soon as I saw it… for my birthday of course! It got a big thumbs up from all that tried it. Hubby & I decided that it’s at it’s best after 20 seconds in the microwave served with some cream.

Ingredients

200g milk chocolate, roughly chopped
200g unsalted butter, chopped
1 cup firmly packed brown sugar
100ml hot water
2 eggs lightly beaten
1 1/3 cups self-raising flour
1/4 cup cocoa
1/3 cup sour cream

Chocolate icing
100g milk chocolate, roughly chopped
1/2 x 395g can sweetened condensed milk
100g unsalted butter

Method
♥ Preheat over to 160 degrees celcius {or 140 degrees celcius for fan forced ovens}. Grease and line a 22cm square cake pan.
♥ Place chocolate, butter and sugar in a large saucepan. Stir in hot water. Cook stirring for 3 minutes or until melted and combined. Take off heat and cool slightly.
♥ Stir in eggs one at a time, until combined {I just mix the whole cake in the saucepan, but you could put it in a bowl from here if you preferred}. Add flour and cocoa. Add sour crea, and stir until combined.
♥ Spoon into cake pan, smoothing the surface. Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean. Cool for 5 minutes in pan and then turn out onto a cake rack to cool completely.
♥ Place all chocolate icing ingredients in a heatproof bowl over a pan of simmering water {make sure the bowl doesn’t touch the water}. Heat, stirring until combined and smooth. Remove bowl from heat and cool slightly.
♥ Spread icing over cooled cake. Scatter with hundreds and thousands, sugar decorations or even some dessicated coconut.

P.S. If you’re wondering what to do with 1/2 a can of condensed milk, why not put it in the fridge and bake half a batch of condensed milk cookies in a few days?

  1. oh Chantelle, such a timely post. I too, am sitting here crying. Just found out my mother in law needs to go through Chemo. Was just thinking about making a cake or some such thing. Don't really know what else to do….

  2. Have you ever boiled a can of condensed milk for like, an hour, at least? Do it. No need for thanks. Just welcome to caramel heaven! My mums been doing this for years ever since I was little girl and putting the caramel on my cakes. Or, you could cheat and by the ready made stuff, but somehow, watching that can boil just makes my taste buds all the more excited for whats to come!!

  3. I'm sitting here with tears rolling down my face. My pa was diagnosed with bowel cancer today. I think I will make him this cake this weekend. I can't imagine my world without him.
