They’re packed with flavour, take less than 15 minutes to make, and are light but satisfying. It’s the kind of recipe that feels a little fancy, but secretly couldn’t be easier. Perfect for warm nights, quick lunches, or when you want something tasty without turning on the oven.

How to make speedy chicken lettuce wraps
- Cook the chicken
Heat 1 tablespoon of vegetable oil in a large frying pan over high heat. Add 500g of chicken mince and cook, stirring often, until it’s browned and cooked through.
- Add the flavour
Pour in 1 tablespoon of sweet chilli sauce, 2 tablespoons of fish sauce, and 1 tablespoon of soy sauce. Stir everything together so the chicken is nicely coated.
- Freshen it up
Squeeze in the juice of half a lemon and toss through 1/4 cup of chopped coriander and 1/4 cup of chopped mint. Stir to combine.
- Serve and enjoy
Spoon the warm chicken mixture into crisp gem lettuce leaves and serve immediately. Yum!

Ingredients
1 tbsp vegetable oil
500g chicken mince
1 tbsp sweet chilli sauce
2 tbsp fish sauce
1 tbsp soy sauce
Juice of half a lemon
1/4 cup chopped coriander
1/4 cup chopped mint
Gem lettuce leaves, to serve
Instructions

- Add sweet chilli sauce, fish sauce, and soy sauce and stir to combine. Add in lemon juice and fresh herbs.
- Spoon into prepared lettuce leaves and serve immediately.
