Cheesy Roasted Carrot Fries!

I don’t know about you, but as soon as it gets cold {which is has up here on the sunny Gold Coast}, I’m all about roasting things, most of all veggies. We’ve been eating a whole lot of roast pumpkin in salads with goats cheese and rocket, and other roast vegetables and meats. This one is one of my faves to throw together for a weekend lunch, or even when friends or family are popping over.

It could not be easier. It’s only three main ingredients and takes under 20 minutes to throw together, and it’s SO comforting. Each week in my shop, I throw in two of these Just Veg. carrot sticks. I eat them as they are, for dinner, or for this recipe. I’ve talked about Just Veg. a lot before, and you can read about that here. They’re doing really great things, like reducing food waste, utilising all of the carrots that were less perfect, and a little wonky and giving them a whole new life instead of going to waste.  They turn them into carrot sticks and carrot shred, which I adore and I know loads of Aussies do as well. CHEESY ROASTED CARROT FRIES

INGREDIENTS
2 x packets of Just Veg. Carrot Sticks
1 cup grated Parmesan cheese
1 tablespoon chopped parsley leaves
1 tablespoon olive oil
Salt and Pepper

Step One: Preheat your oven to 220ºC, and line a baking tray with baking paper. For this recipe I used two packets of carrots sticks to serve more people, but you can easily halve the recipe and make less!

Step two: In a large bowl, combine all of the ingredients. Toss to combine and coat carrot sticks.

Step three: Place everything onto a tray in a single layer. {Or go rogue like me and just toss them on and hope for the best!}. Roast for 16 to 20 minutes, or until golden.

Step four: Serve warm with your favourite dip. Mine is garlic dip. You could try sour cream and sweet chili sauce, or even hommus! Anything goes.
